Spinach Chicken Parmesan

added garlic to the spinach. used sundried tomatoes instead of the pimento. easily quadrupled the Italian herb blend. served with garden tomatoes with fresh basil and olive oil, and crusty bread. will be making this again!

Pasta e Fagioli I

I too cut the tomatoes in half and cooked the pasta separately. I added carrot and ham. I simmered for about 4 hours for the flavors to blend and cook off the acid in the tomatoes. After 2 hours, I pureed1/2 the soup to thicken it up. Topped with Romano & fresh minced parsley.

Shrimp, Leek and Spinach Risotto

I switched it up a little since I didn't have all the ingredients or like them. Used 1 cup of rice and TWO cans of chix broth. Added garlic to the chix broth. Omitted the leeks & chile pepper. Added mushrooms and more garlic and cooked with the spinach. Stirred in a 2 handfuls of Romano at the end. Was delish!

Grilled Potato Casserole

This is easy an versatile, however, we didn't care for the celery seed. It takes on an odd flavor when heated. I sprayed the foil with pam and it came off easily. Also divided the packets in three - easy reheat in the oven or grill if there are left overs. I would make again without the celery seed.

Double Chocolate Biscotti

I've been making biscotti for years, but wanted chocolate biscotti this year and thought I'd try these. These are flavorless - I was so disappointed. Definitely needs more cocoa or something! Dipping them in chocolate didn't help either.

Restaurant Style Beef and Broccoli

This was good and quite easy to make, however, I know my taste buds and added garlic, didn't have fresh ginger and used 1T of ground ginger. The 2nd time I made it, I didn't have enough broccoli so added water chestnuts, baby carrots and chopped onion, it became beef & vegetables and everyone cleaned their plates! I served with brown rice cooked in beef broth.

Spanish Rice II

I will be the first to admit that I am not a big fan of spanish rice...something about tomatoes & rice are not that appealing to me. But....this was good. I used chicken stock in place of the water, omitted the bell pepper, and added 1 tsp of cumin and 1 T of chopped garlic. I'm not sure that browning the rice adds anything to the dish - next time I'll try it w/o browning it. Made this w/ the Chicken Enchilada Casserole from this site - it was a HUGE hit. Thanks.

Layered Chicken and Black Bean Enchilada Casserole

This was very good. I did not have all the ingredients on hand, specifically the corn tortillas. I made the Spanish Rice on this site, and used that in place of the tortillas. I did add garlic (1-2t) and doubled the spices & the chicken and added a can of corn. Used lowfat sour cream & low-fat cheddar. Everyone loved it and we have enough for another meal later in the week!

Honey Baked Chicken II

This was delicious. Used boneless-skinless thighs, cut into bite sized pieces. Took about 30 minutes to cook. Served over a green salad with gr. onions, shredded carrots, tart apples, walnuts with honey-dijon viniagrette. Scrumptious!!

Home-Style Brown Rice Pilaf

I absolutely loved this! Cooked the rice in a steamer. The cashews added to the nutty flavor of the brown rice. Flexible since you can add whatever veggies you want. We omitted the chic peas and opted to not use the soy.

Incredibly Delicious Italian Cream Cake

This is a good, traditional Italian Cream Cake. Watch the cooking time and reduce by 10-15 minutes or the cake will be very dry. Recommend doubling the icing since it it a 3 layer cake

Grilled Delmonico Steaks

This was very tasty. I did what others suggested and eliminated the salt. While I love rosemary, I am not fond of it with beef, so I substituted oregano. The steaks were very tender and tasty.

Aussie Chicken

We made this for an easy Sat evening dinner w/ friends. While we love bacon, I used turkey bacon instead. Prepped early in the day a popped in the fridge until ready - increase cooking time by 15-20 minutes if you put in the fridge. Guests asked for the recipe! It was a hit.

Fresh Broccoli Salad

Very good recipe, however, I did make a few modifications. I used turkey bacon, dried cranberries and sunflower seeds in place of the bacon, raisins & almonds. I reduced the sugar to 1/4 cup, and used Balsamic vinegar. My husband, who won't touch a raisin and thought he didn't like dried cranberries, asked for seconds!! Next time I will try it with reduced fat mayonaise.

Sun Dried Tomato Focaccia

One word of caution: Partially cook the bread BEFORE topping with the mozzarella. The bread did not rise where the cheese was. It looked great, smelled wonderful, was even tasty, but.... was undercooked and did not rise with the cheese. Since the combination of flavors is a definite winner, I will try this recipe again with modifications.
