Lazy Bruschetta

Reviewed: Feb. 15, 2013
Yes but I added some fresh basil leaves on top of the tomatos, really kicked it up a notch or two.

Simple Slow Cooker Pork Chops

Reviewed: Dec. 13, 2012
Pretty much made it as presented but did go the healthy choice route for the soups (mostly because the onion soup mix has so much sodium,MSG). As to 6grandkids comment about 4 chops making 6 servings, the chops I buy are a minimum of 11/2 inches thick and if you follow the guidelines of how much meat protein you should have per serving (prox 3oz), 4 is very adaquit. Those 8-12 oz steaks are a dietery overload!

Baked Chicken

Liked it but made one change in the process; I put the chicken on a wire rack in a pan to ensure crispness all around.

Bow Tie Pasta with Sausage and Sweet Peppers

Reviewed: Nov. 5, 2012
We enjoyed this recipe but, the on line picture was not with bow tie pasta as the header stated. Also, the picture showed red and green peppers, not just green peppers as the ingredient list stated. Have seen many of these types errors lately on your site. Would add mushrooms to the recipe.

Beer Burgers

Reviewed: Aug. 3, 2012
This very similar to a recipe I have used for quite some time. Only difference is I use an IPA or a Porter for the beer. Also, instead of salt and pepper I use Cosco's Sweet Mesquite seasoning. Really adds a nice smokey taste to the burgers.

Mediterranean Greek Salad

Reviewed: Jul. 25, 2012
Because this recipe leans to a Greek salad I used kalamati (?) olives instead of black olives. Made it a second time and used the black olives. They were okay but the kalamati olives definately added to the recipe.

Pasta Pomodoro

Reviewed: Jul. 16, 2012
Fixed the recipe as presented. Way to much pasta for the rest of the ingredients! We wanted to make it a complete dinner with shrimp. Added 1 lb. of medium shrimp and they disappered. There was enough pasta to feed 6-8 people and the rest of the ingredients were not enough. A fix: use 8 oz. pasta with all of the rest staying the same. Next time will use 11/2 lbs. shrimp. Flavor was great and be sure to use fresh basil if available.

Creamy Horseradish Garlic Spread

Reviewed: Jun. 12, 2012
I have been trying to make the "best" horseradish sauce for years. Really like it on beef sandwiches. This recipe does all that I want it to do, except, I would leave out the dill for beef preps. Otherwise would go great with seafood and maybe chicken.

Cheesy Chicken Meatballs

Reviewed: Jun. 5, 2012
As originally presented the recipe was way to mushy. I had to compensate for the extra egg with added panko crumbs. Worked well. Also do not like to pay the extra for flavored cream cheese, just upped the garlic powder and that worked well. May cut back on the oil next time to see how that works out.

Caprese Burger

Reviewed: May 14, 2012
Being a big fan of Caprese salad which I have always made with a reduced balsamic vineger (which changes the whole vinegar taste) I can see where some reviewers would not care for the vinegary taste. I did not marinate the tomatoes in the vinegar but added it (the reduced version) as a condiment on presentation. Stayed truer to the to the Caprese idea. Just be sure to have large leaf basil for the greens for the finish.

Asparagus Pie

Reviewed: May 7, 2012
Great recipe, easily adaptable for type of meal and personal tastes. I wanted a main entree that was all inclusive. I made the recipe as presented with these additions: Sauteed fresh, sliced mushrooms with asparagus. Diced up some left over honey glazed ham and added to the batter. Used a pinch of thyme and basil in the batter. Prepared as written put in the oven. 20 minutes before taking out I topped with shredded sharp cheddar cheese and continued to bake until cheese started to crisp at the edges. Because of the ham I used unsalted butter and omitted the salt in the recipe. Put salt on the table for those who thought they needed it. Will definately use Chef John's recipe again!

Bechamel Sauce

Reviewed: Mar. 27, 2012
Good sauce however, substituted thyme with 1 large bay leaf (thyme can be overpowering for some dishes) and the broth/half-and-half with 2 cups whole milk. Omitted salt (used salted butter) and made a light blonde rue with the butter and flour, created just a bit more character. This recipe is a great starting point for many other sauces. With the addition of other herbs/spices/cheeses you can go to mornay sauce, bernaise sauce and many ohters.

Steak and Bacon Tournedos

Reviewed: Jan. 31, 2012
to Joy, I have made this recipe 4 times and have used both basil and tarragon pesto (homemade with lots of parmesan cheese). The basil pesto seems to work the best. I do omit the tenderizer and use beer to marinate the steak over night. Does a great job of tenderizing. I also leave out the parsley because of the pesto. Skirt steak works also but the low cost of flank makes an economical meal and is also fun to work with.

Chicken Fried Chicken

Reviewed: Aug. 29, 2011
It appears that most of the recipes use chicken breasts. That is ok but, dark meat is much more flavorable and moister. Folks, you need to get off the "scare wagon" about poultry dark meat. Many of the poultry recipes on this site would be 6 stars if leg and thiegh meat were used. For the amount of product used there would be minimal difference.

Teriyaki and Pineapple Chicken

Reviewed: Apr. 6, 2011
Definately cut back on the teriyaki sauce, used 3/4 cup of Yoshida's gourmet sauce instead. Also used minced garlic instead of powder (3 medium cloves). My wife does not like hot seasoning, so left out the red pepper. Otherwise a redoable recipe.
