Tangy Tuna Black Bean Quesadillas

These are really good. I made them in advance and then froze them for work lunches, so i didn't try this until today. A very nice change from turkey or chicken all the time. My only change was using broccoli instead of corn since I cannot have corn.... oh and real garlic!

Bacon Brownies

I really liked these. I added most of the bacon inside and left a few for the top to decorate the plate. Really rich. Tasted great warm.. hope they taste good tomorrow as well

Easter Leftovers Frittata

I liked this. I used broccoli and mushrooms, since I can't eat bell peppers or corn and reduced the pasta by 25%. I still found it was a bit too much pasta so I added a bit more egg. I am pretty inept with flipping so I cooked this in a cast iron skillet on the stovetop and the put in the oven for about 20 minutes. Came out great. Only thing I would do differently next time is more seasoning. I tasted the mixture and it was fine, but when you take a bite with the pasta after it is cooked, it seems a bit bland.. so next time I'll overseason the mixture so it'll balance out when I eat it

Broccoli Blue Cheese Strata

As is, I rate this three stars,, but it does have potential..I added crumbled blue cheese to it,.. It needs more egg and more seasoning.. and the blue cheese taste wasn't even very strong with my addition of blue cheese crumbles. Update - I had leftovers of this a day later and I must say it tasted much better.the need to more eggs was less evident and the seasonigns had melded.. so I am upping the rating to 4 from 3

Surprise Cookies

These are delicious. I make a cookie that has no sugar in the actual cookie, like this one and when rolling it out, I roll it in sugar. I tried rolling this in flour and then rolling some in sugar. I liked the ones rolled in sugar better. That was my only change. These are flaky and have almost a pie crust feeling to them

This is a nice cookie. I used orange since I didn't have lemon and crisco. I made half of the batch with ground up walnuts I wanted to use up. I liked the ones with the walnuts best I think., but they were both tasty

Homemade Deviled Ham Spread

This was so good. When I was a kid, deviled ham and cream cheese was my very favorite sandwich. The canned stuff is just awful, nutritionally so I made due with good memories. When I found this recipe, I knew I had to try it. I used fat free mayo, a very lean ham and left out the carway seed. I toosed it all into the food processor. I made a sandwich with this and fat free cream cheese... and it was wonderful!
