About this Cook
I cook because I love to create. I find it to be very soothing and rewarding. My mother was my greatest influence, but because of my love of experimentation I think I am a better cook than she is now. :)
My favorite things to cook
Anything healthy. I love to try new recipes and love the challenge of altering high caloriefat recipes to something more healthy.
My favorite family cooking traditions
Swedish Christmas cookies. These were baked by my mother and now by me.
My cooking triumphs
I have had few failures when cooking. Every new recipe is a triumph when it turns our terrific.
My cooking tragedies
The first cake I made by myself was a bit of a disaster. I think I was 11 or 12. I didn't let it cool in the pans after baking and frosted it while it was still warm. Needless to say, it sort of fell apart. Refusing to let that stop me, I held the cake together with half a box of toothpicks. My father ate half the cake.. he was a good Dad. Didn't complain once about the toothpicks. :)

LOVE this stuff. Used soy sauce instead of liquid aminos. had this on pizza and with scrambled eggs.. wonderful stuff

Slow Cooker Alabama Pulled BBQ Chicken
I made with chicken breasts.. I dont care for dark meat. I cooked this for 3-4 hours in high.. shredded meat and put back in for an hour. I didnt get much flavor at first, but when I added the sauce.. it was great. Loved the tang of the vinegar

Roasted Baby Eggplant, Tomato, and Zucchini
Made as per recipe, needed help with seasonings. I served this with a cajun turkey sausage on the side and that helped a lot. This recipe is a good start..
