What I am thankful for

As Thanksgiving approaches and the weather changes, the holiday hell begins. Usually I let things pass without much of a notice as I am alone with no family near me. Friends are nice, but around the holidays they have their own family they want to be with. I usually spend time with some church people or volunteering this time of year. Good for the soul.

I do love a good Thanksgiving meal.. gotta have turkey, stuffing and mashed potatoes. I never liked stuffing as a  kid. My Mom remarried a southerner and started making the stuffing he liked - conrbread, buttermilk biscuits and sausage. I tried it and fell in love. The only kind I make now. When I was a kid I'd make cauliflower and cheese sauce for me and my dad and we'd also have peas with pearl onions. Dessert was flexible, but a good Dutch Apple Crumb pie was always welcome

This year is different than most as I just got out of the hospital on 10/30. Over a period of just about a month, I had three hospitalizations and two major surgeries. All of this was unexpected and unplanned and not a whole lot of fun. I have a lovely 9 inch plus scar down my middle and am home recovering.  So this year I am thankful just to be alive, and on the road to recovery. I am thankful for the doctors who got me through it all, the wonderful nurses who cared for me night and day, the orderlies who shuttled me here and there and the friends who supported me by bringing me to the hospital, bringing me things I needed, caring for my cat and visiting me while I was laid up. It was and is very humbling. So this year I am thankful for something very basic.. my health and my life. It is true what they say...if you have your health, you really do have everything. The rest will fall into place

I, for one, will not be skipping past Thanksgiving straight to Christmas. Giving thanks is really important for me this year....

I am glad you are on the road to recovery! Thanksgiving has always been my favorite holiday (well since I've been an adult) and I had a few years when DH was in the service and we were nowhere near my family. I used to cook the whole meal amd invite either elderly neighbors who would also be alone or someone from my church. I hope someone does something like this for you this year. It sounds like you have some really good people around you.

Dear Linda, I'm grateful that you are grateful. You've had more than your share to deal with. My thoughts will be with you during this holiday. I hope you have signed on to continue your Ambassadorship with AR! Wish you could have been with us SoCal folks today as we enjoyed a lunch together! One of these times......

My dear Linda, how sad I am to read about your troubles. My only wish is that if I get that ill, I will have the grace, love and thoughfulness you have shown your caregivers/friends. God Bless you and am hoping you are better very soon!

Linda - welcome home! What you have experienced really brings things into prespective....what is REALLY important. Blessings to you! Thank God for good friends - I wish we were closer - your AR friends are in your corner, cheering you on to good health. As Marianne said... we will get together....one of these times. In the mean time you are in our thoughts and prayers.

I'm glad you are recovering from so much. Your story eloquently shows how if we don't have the basics of life the rest truly doesn't mean so much.

About Me
I cook because I love to create. I find it to be very soothing and rewarding. My mother was my greatest influence, but because of my love of experimentation I think I am a better cook than she is now. :)
My favorite things to cook
Anything healthy. I love to try new recipes and love the challenge of altering high caloriefat recipes to something more healthy.
My favorite family cooking traditions
Swedish Christmas cookies. These were baked by my mother and now by me.
My cooking triumphs
I have had few failures when cooking. Every new recipe is a triumph when it turns our terrific.
My cooking tragedies
The first cake I made by myself was a bit of a disaster. I think I was 11 or 12. I didn't let it cool in the pans after baking and frosted it while it was still warm. Needless to say, it sort of fell apart. Refusing to let that stop me, I held the cake together with half a box of toothpicks. My father ate half the cake.. he was a good Dad. Didn't complain once about the toothpicks. :)
