Beetroot Hummus

This recipe is a WOW -- impossibly purple, but the flavor of beet is not overpowering. My skeptical 13-year-old ate half the bowl, and then took the left-overs to school for lunch. I added a bit of salt, and think I would add more the next time I make this.

Carrot Salad

Pickled Carrot Salad

This is a great salad (and a great way to use up a bumper carrot harvest...). The carrots soak in a viniagrette-like dressing which gives them great flavor. Next time I'll cut back on the garlic -- I used only half what the recipe indicated at it was very very garlicky.

Roasted Corn Salsa

Disappointingly bland. The proportion of ingredients seems to be off, as this had absolutely no zing and the corn flavor was too dominant.

'I Hate Cucumbers!' Cucumber Salad

This was a very briny salad, almost like eating pickle juice. The second time I made it, I decreased the vinegar substantially and increased the sugar and mayo -- much better. We deleted the celery. This is similar to my grandmother's old German recipe, and is also good with sliced fresh tomatoes.

Lime-Marinated Grilled Salmon

This was a very disappointing marinade. Lime does not accentuate the flavor of salmon. We won't be making this again.

Chicken Fajita Marinade

Very disappointing, and I followed this recipe to the T. We could definitely taste the lime, but not the chili, cumin and other flavorings we thought would make the chicken really zingy. This one goes in the trash for me.

Chicken Tortilla Soup V

This recipe is an exceptional find! I join everyone who wishes they could give it more then five stars. I think it's the lemon juice that gives it the extra tanginess. Next time I'll use more broth, as others suggested.

Premier White Almond Bark

We packaged almond bark in tins last Christmas and gave them as gifts -- the toasted almonds give it a rich flavor, and people cannot believe it's homemade. (Of course it's our little secret how easy it is to make!)

Pumpkin Pancakes

These are absolutely delectable, especially served hot with real maple syrup. The next time I make this, I'll either cut back on flour by about 1/2 cup or increase the milk... the batter was so thick and heavy that it couldn't be poured.

Jim's Macaroni Salad

This salad was a huge hit at a recent cookout, and it gets better the longer it sits in the fridge. We've played around with the recipe by adding bacon, fresh tomatoes and more pickles. Delicious!

This was a big disappointment. The pancakes were extremely doughy and heavy, and didn't have much appeal with the family. But at least we used up the leftover mashed potatoes!
