MMMMM... Brownies

I would have to respectfully disagree with the reviewer who wrote that these brownies are as good as the ones out of a box; these are so so so much better! After a long day of wrangling sick fussy kids, I was in desperate need of some chocolate therapy and these brownies were just what the doctor ordered. I used a 12 oz. bag of semisweet chocolate chips and then tossed about 1/2 cup of milk chocolate chips in with the flour. These brownies are like little bites of fudge. I had to give half of them away so I wouldn't eat them all.

Soft Sugar Cookies IV

I love this recipe! Sugar cookies have never been my favourite cookie because they tend to be a bit crisper than I like, but these ones are so soft and tender. I used almond extract instead of vanilla because I'm a sucker for almond, and they were fantastic. My two-year-old daughter and I rolled out a portion of the dough so we could cut out hearts and then rolled the rest into little balls and dipped them in sugar; both turned out great. Thanks for this wonderful recipe! I'm throwing out my other one and replacing it with this one.

Fresh Apricot Crisp

This is such a nice, easy, and delicious recipe! I added about 1/2 teaspoon of almond extract and some flour to the apricots as one of the other members suggested. I also added cinnamon to the topping. Our house smelled fantastic! The fruit was soft and sweet and the crispy topping was a nice contrast with the fruit. We'll be using this recipe quite often in the future.

Chicken Pot Pie IX

I hadn't made chicken pot pie before and looked at a few different recipes before deciding to use this one. Fantastic! My family loves it, and I've made it twice now. I made my own pie crusts instead of using frozen and added a bit more of the veggies; also I didn't have any chicken broth the first time I made it so I used the cooking water from the chicken and veggies and it turned out fine. The chicken was tender, the veggies weren't mushy like I was afraid they might be, and the gravy was the perfect consistency and tasted delicious. Thanks so much for the yummy recipe! It's a great base recipe that can be varied. I know I'll keep coming back to it over and over.

Chewy Peanut Butter Chocolate Chip Cookies

It's not usually a good thing when you misplace one of your favourite cook books, but in this case it turned out rather well. Since I couldn't find the cook book I needed, I just searched the website and came across this recipe. The cookies were really easy to make and turned out beautifully. They are pretty big cookies, but they're fluffy and moist and chewy, and you just want to keep eating them. You should have seen my husband's face when he walked in the door. They were a huge hit, and I'll be making them for years to come. I'm so glad I couldn't find my cook book!
