This has been a very good year for cucumbers and I wanted an easy recipe for pickles. Easy it was. I sliced the cukes and onion and put them in two quart jars. I left out the green pepper because they are so expensive. I also reduced the salt by half. I let the vinegar mixture cool slightly and poured it in the jars and realized I didn't have enough liquid so I boiled another batch of vinegar and sugar. A double batch filled two jars nicely. The pickles taste very good but they are limp. No crunch at all. Wonder why? Could it be that I used only half the salt? Or that I didn't mix everything in a large bowl? I saved the liquid from one jar and will boil it and try again. Next time I will use a green pepper and add dill to the jar. I will also eat them immediately.
