Becel® Holiday Butternut Squash with Apple and Cranberries

Early fall puts us in the mood for winter squash and this recipe is very tasty! I found cubed butternut squash for an unbeatable price and needed a way to use it. I followed the recipe closely and it was excellent! I pureed the leftovers, added grilled chicken chunks, brown rice, and chicken stock and had a wonderful seasonal soup! I’ll keep this as a go to recipe for winter squash.

Individual Baked Eggs

This was very timely and very yummy. I baked the eggs in individual silicone muffin cups. It turns out the eggs bake at the same time and temperature as baking powder biscuits, so they make a very complimentary breakfast duo. I had some left over sausage gravy (also from this site), so I didn’t use any meat with the eggs, but I did sprinkle salt and pepper on top before baking. By using the silicone cups I didn’t need to use any butter or cooking spray, they turned out of the cups beautifully. In 15 minutes, I had a piping hot breakfast of freshly baked biscuits, baked eggs and sausage gravy and very little effort. There are so many ways that this recipe can be customized, I will definitely be making these again. Great idea – thanks for sharing!

Quick Quiche

I just tried this because it was today’s “Daily Dish” email recipe and it sounded like a creative way to use the leftover taco meat I had on hand, so the timing was perfect. I used the taco meat and Mexican cheese mix instead of the bacon and Swiss. I was out of milk so used 3/4 c. sour cream as it complements the taco theme anyway. The custard I’m sure was a little denser, but Wow!! This was so delicious and easy – definitely going to add this as one of my “go to” recipes! I’m sure I’ll try this with the bacon and Swiss (and milk) at some point, but with so many ingredient possibilities, it probably won’t matter, the basic recipe is a delicious starting point.

Super Sausage Gravy

I love easy breakfast recipes with leftover potential! This one certainly qualifies and it’s delicious! I’m very rural, but our lovely country store makes their own pork sausage which is very tasty and much leaner than many national brands. I added a little bit of butter because there weren’t enough drippings for the flour; I also increased all the ingredients but the sausage by half because I prefer a larger gravy to sausage ratio. Seasoning is a matter of personal preference and I think as is the recipe is a great starting point. After the first time, I started adding a few shakes of “Mexi Pep” to add a little more pop to the taste. Give this recipe a try and make it your own, you won’t be sorry.
