Individual Baked Eggs
This was very timely and very yummy. I baked the eggs in individual silicone muffin cups. It turns out the eggs bake at the same time and temperature as baking powder biscuits, so they make a very complimentary breakfast duo. I had some left over sausage gravy (also from this site), so I didn’t use any meat with the eggs, but I did sprinkle salt and pepper on top before baking. By using the silicone cups I didn’t need to use any butter or cooking spray, they turned out of the cups beautifully. In 15 minutes, I had a piping hot breakfast of freshly baked biscuits, baked eggs and sausage gravy and very little effort. There are so many ways that this recipe can be customized, I will definitely be making these again. Great idea – thanks for sharing!

Quick Quiche
I just tried this because it was today’s “Daily Dish” email recipe and it sounded like a creative way to use the leftover taco meat I had on hand, so the timing was perfect. I used the taco meat and Mexican cheese mix instead of the bacon and Swiss. I was out of milk so used 3/4 c. sour cream as it complements the taco theme anyway. The custard I’m sure was a little denser, but Wow!! This was so delicious and easy – definitely going to add this as one of my “go to” recipes! I’m sure I’ll try this with the bacon and Swiss (and milk) at some point, but with so many ingredient possibilities, it probably won’t matter, the basic recipe is a delicious starting point.
