Jalapeno Hummus

Very nice versatile recipe for hummus that can be modified to suit any taste. I first made as suggested, but my own personal tastes dictate just a few changes. No tahini, less lemon juice, addition of a little olive oil for smoothness, a little more cumin and about 50% more jalapenos. Wonderful.

Corn Chili

Easy and good, but don't call this chili as it stands. I did add two tablespoons chili powder and extra cumin along with the suggested amount of cayenne and liked it a lot. I would like this better with a couple of pounds of ground beef added and may try it that way next time. I like the texture and crunch the corn added.

Homemade Focaccia Bread

Made an okay bread, but I prefer my focaccia with more herb flavor. This recipe is a little bland. I will add herbs to the dough next time.

Peruvian Chicken Soup (Aguadito de Pollo)

Very good soup. I want to try a couple of changes however. I will use a little less rice and use brown rice. I used one serano pepper and will use two next time and probably add a few seeds for a little pepper heat.

Louisiana Shrimp Casserole

I followed directions exactly and found it to be good, but not quite the flavors that I like best with shrimp. I will add seasonings to make it more Cajun flavored next time.

Gramma Brown's Corn Chowder

We loved this one. The only change I made was using half and half instead of milk simply because we had it and it had to be used. It was superb and I would do it the same way again.

Lemon Marinated Chicken

I like lemon chicken, but this recipe is a joke. I always try recipes as printed first and then alter to my tastes if necessary. By the time I alter this one it will barely resemble the original. There is far to much lemon zest. I would also replace the vinegar with white wine, reduce the amount of oregano, add some basil, garlic and about 1/4 cup of oil. I would then grill rather than bake.

Zesty Tilapia with Mushrooms

I made a few changes based on other reviews. What resulted was very good. I used white mushrooms, cut the lime juice in half, and seasoned with Emeril's Essence. One comment about suggested cooking time. This fish cooks very fast and is easy to overcook. The suggested cooking time is to long.

Skillet Herbed Chicken with Mustard

We liked this a lot. The result was a little dry, but otherwise very flavorful. I only used one tablespoon of tarragon but will go for two next time. I also used a dealcholized chardoney for the wine. The recipe didn't call for it, but I turned the chicken so that is was brown on both sides and had enough heat under it to caramelize the sauce. It was very nice.

Alternative Baked Salmon

This is one of my favorite salmon recipes. I used low carb herb bread and added sage and thyme. I also used minced fresh garlic rather than dried. The result was terrific. It did take closer to 30 min. to bake.

Braised Balsamic Chicken

I loved this one. I added a scant teaspoon of red pepper flakes and that made it five stars for me. Next time I will only use 1/3 cup of balsamic vinegar and use fresh rosemary rather than dried.

Mexican Chicken Kiev

Wow. This is wonderful as is, but hardly worthy of being called Mexican. I followed the recipe with one exception, I used pepper jack cheese for a little more kick. I also used 1/2 of an Anaheim chile in each chicken breast. (They were large breasts.) I intend to do this one again with a couple more modifications. I am going to double the cumin and add 1/4 teaspoon of cayenne to the bread crumbs. Then I will call it Mexican.

Slow Cooker Chicken with Mushroom Wine Sauce

I could see the potential for this recipe being bland so I took steps to prevent that from the start. I used about 4 garlic cloves minced. I added a tablespoon of Italian herbs rather than parsley. I used a whole envelope of onion soup mix and added a teaspoon of Tobasco. The result was wonderful.

Rosemary Mashed Potatoes and Yams

I have made this recipe several times over the years. I first saw it in Bon Apetite. It is the best use of yams I have ever found. I use a whole head of roasted garlic and fresh rosemary. Superb!
