Fresh Beet Salad

Reviewed: Jun. 17, 2012
We had some beets and swiss chard given to us out of a friend's garden. Went looking for recipes and found this. It was so unique and I was a bit leery. But it was veerrrry good! My husband is not a huge veggie fan and he really liked this a lot. We will definitely make it again.

One Pot Tuna Casserole

Reviewed: Feb. 9, 2012
Four stars with my tweaks, 3 without. Reduced pasta to a 12 oz bag of bow tie pasta. Increased tuna to 2 cans. Had to increase milk to 1/2 cup. Needed some seasoning of onion powder, salt and pepper. I would have sauteed some onion with the butter if I had thought about it. Sharp cheddar is good. I made this lighter by using light butter, skim milk and 2% cheese, and tuna packed in water. No one was any the wiser and it was delicious and very quick and easy.

Spaghetti Pie II

Reviewed: Aug. 2, 2010
This recipe was in the cookbook that came with my microwave we bought when we first married nearly 30 years ago! So I first learned to make this using the microwave. Great idea if you don't want to heat up the kitchen. It had you prepare the "crust" and then pop that in the microwave on 50% heat for 10 minutes and then add the filling and cook for 10 minutes on high and then add the cheese on top and cook another minute. It was one of my husband's favorite dishes and I haven't made it in a long time. Just forgot about it.

Blackberry Pie I

Reviewed: Jul. 17, 2010
This was awesome! First fruit pie I have ever made. My husband loves pie and is picky about it (which is one reason I never attempted one) and he says it is one of the best pies he has ever eaten. I used fresh berries (nearly 6 cups and it wasn't a deep dish) and the generic brand of refrigerated pie crust. The only change I made was to sprinkle some lemon juice over the berry filling. In my opinion it was a bit tart (probably because I used more berries) and so I might add 1/4 c. more sugar next time but my husband thought the sweetness was perfect. The consistency was perfect. I cooked it for 28 minutes after I turned the temp down to 375. I could have cooked it for 30 and it would have been fine. Again, I think because of the extra berries. DELICIOUS and so simple! *For those who thought it was pasty--you have to mix the berries with the flour and sugar until you see no white and it is all sticking to the berries.
