My cooking level was top notch but when the nest became empty I started cooking those frozen boxed dinners with 300 calories or less..forgot everything my Mom and Grandmother taught me...but occasionally I take out a skillet and do some damage.
My favorite things to cook
Eggs Benedict with hashbrowns instead of english muffins. Try it..its awesome! You can even use tator tots. Love this on a rainy night and no I do not make my own sauce..i use the envelope..just as good to me. There is a Strawberry spinach salad in my recipe box that my Mom and I make often..its awesome. Also the sloppy joes in my recipe box are awesome. The chicken with the celery in the cavity from my recipe box is awesome. These are go to recipes I use when I decide to actually cook. And there are others in my box...oh i forgot the pot roast with all those envelopes of stuff..brown gravy mix etc is awesome too. Love this website even though I do not cook on a regular basis. Just when I want to wow some family members.
My favorite family cooking traditions
Chicken Pie (most call chicken dumplings). Gumbo. BBQ Shrimp (no bbq sauce involved). A.O. Water Soup (story behind this one..its delicious). Tomato Gravy and Biscuits. Ok I can't not share the A.O. Water Soup story. My grandfather started a car dealership many moons ago. He and my DG had 8 children and lived on a farm. Chickens, cows, etc. Things were tough and my DG cooked on the cheap. She would kill a hen, boil it in a pot of water, add onions, salt pepper and serve it over rice. It was a poor mans meal but filled the kids up. One night my Gramps brought home a surprise guest, a very important client and was very embarrassed that this simple soup was what she had cooked for dinner that night. There was no choice but to serve the man the chicken soup over rice. The man's name was Mr. A.O. Water so now properly named. This soup has been upgraded from its humble beginnings and is now the hit of the family...my tweaking has won the family award for "best A.O. Water Soup Upgrade"
My cooking triumphs
My Chicken Pie and A.O. Water soup which I have tweaked from my Grandmothers recipe. I had a friend who passed away a few years ago from breast cancer, chemo was so hard and she could not eat anything but my A.O. Water soup. I have no exact measurements but its a good for whats ailing you soup and would be happy to share.
My cooking tragedies
Undercooked pork roast one Thanksgiving. I was sick for 2 weeks. My husband 48 hours. My brother...it did not even phase him for some unknown reason, go figure. I will never forget it. Thank heaven's no one ate any but the 3 of us. Big lesson learned there!!
