Steve's Whole Wheat

Reviewed: Jan. 26, 2011
I made this as written, it made a nice light loaf with a nutty taste. The humidity is low now in January but I will definitely decrease the yeast in the summer - every loaf rises too much then. But for now it was perfect. Edit: Since my review I've made this countless times; it's my favourite bread recipe. Even my gluten-intolerant mother in law can't resist it!!

Zucchini Pie

Reviewed: Oct. 7, 2010
Delicious but mine came out swimming in oil, had to pour it off! Not sure what happened, maybe because I used homemade biscuit mix with shortening pre-mixed in. The taste is very quiche-like and I thought next time I'd add crumbled feta and bacon.

Seafood Chowder

Reviewed: Nov. 5, 2010
*Sigh.* This is divine. I've been eating chowder all summer at a number of different coastal restaurants and if I'd found anything like this it would have blown my mind. I burned my mouth, couldn't wait for it to cool!! I halved it and will still freeze some - it makes a lot. The only other change was once the onions were partway cooked, I added about 2 tsp of flour to get a bit of a roux going - I like it a bit thicker. AMAZING.

Brown Rice Bread

Reviewed: Jul. 5, 2012
This made a lovely loaf! I added a bit of rye flour (~1/4 c) mostly for visual appeal ;) The dough was really sticky (it's July by the coast so the flour has a lot of humidity) - not sure if that was just me or if the recipe tends to be wet - remember to touch the dough during mixing & add a bit of flour at a time if needed. A keeper!

Southern Hollandaise Sauce

Reviewed: Jan. 3, 2011
De-lish! I landed on this recipe after my first attempt bombed. This worked beautifully - make sure you don't give the eggs too much heat or they'll scramble!! I didn't add the lemon juice but just a dash of vinegar. Had it with eggs benny - made enough for 3 servings.

Flax and Sunflower Seed Bread

Reviewed: Jan. 11, 2011
Delicious! Nice light texture and great taste. I used ground flax (a bit less than amt. given) and left out the sunflower seeds as I didn't have any. I tried it for grilled cheese and it was fabulous. A keeper for sure.

Easy Tuna Casserole

Reviewed: Jan. 13, 2011
I've made this twice now and I'm giving it 5 stars for being so simple and still tasting amazing. I used cr. of mushroom soup and onions carmelized on the stove. I am now going to go make it again.

Chewy Chocolate Chip Oatmeal Cookies

Reviewed: Jan. 17, 2011
Fabulous! Followed others' suggestions and added extra 1/2 c flour and 1/2 tsp baking soda. My kitchen tends toward cold (62F - what can I say, it's a drafty house!!) so I didn't bother refrigerating the dough and all was well.

Delicious. I didn't have dill but used dill seeds, half the amount. This made great Reubens!

Mark's Delight

Reviewed: Feb. 12, 2011
I really loved this twist on the chocolate chip cookie! The cookies have a nice texture and they're very sweet, just how I like 'em. I wanted to try this recipe to use up leftover glace mix from Christmas and it worked great.

My dear dog says 5 stars! I didn't have honey so used half the amount of molasses. She loves them!

Hasty Chocolate Pudding

Reviewed: Mar. 13, 2011
I thought this was great - not being a pudding connoisseur, it tasted like chocolate pudding should, as far as I could tell! I used skim milk as well - it may have taken a bit longer to thicken - maybe 5 one-minute sessions? but tasted great. I think some people may be having trouble with the pudding maintaining a consistent temp - i.e. if you stir too long between the 1-minute cooks it might not be getting hot enough to thicken. Don't stir for any less than 2 min though.

Chocolate Cobbler

Reviewed: Mar. 16, 2011
Delicious! I have no idea how the chemistry of this works but wow. I cut down on the sugar - 1/4 c in the batter and about 1/4 c in the topping. I found it just sweet enough w/o it.

Raisin Chocolate Chip Cookies

Reviewed: Mar. 19, 2011
THese were fabulous. I didn't realize until I'd already started the recipe that I only had 50% fat mayo but they turned out great just the same. I sub'd shredded coconut (1/4 c) for the nuts as I didn't have any and really liked the taste. I should point out that there were 5 stars even though I burned them!! :) The edible parts were divine.

Potluck Special

Reviewed: Mar. 22, 2011
Made as written except I didn't rinse the sauerkraut. The flavour developed overnight. For an easy comfort food dish it was great!! I would like a little more tomato kick so may add some tomato paste next time, as well as a thick layer of mozzarella cheese on top :)

German Apple Pancake

Delicious. Wish I'd read the reviews first, I would have added a 2nd apple! I'm not a fan of nutmeg but I cut it in half and liked it at that level.

Baked Hot Dog Sandwiches

Reviewed: Mar. 28, 2011
I've made this a couple of times - it's on my list of favourite comfort foods! Best way to eat hot dogs :) I add sauerkraut, and when I didn't have bread, have sliced potatoes & baked them (35 min at 400) and then topped with the filling & baked 10 min more at 350.

Fabulous!! I followed the recipe except seasoned the chicken with Cajun seasoning mix before the olive oil step. This is the best oven baked fried chicken recipe I've tried yet.
