Poor Man's Chicken Fried Steak

Reviewed: May 12, 2012
As other reviewers have stated, this was great! I didn't have any milk so used 1/2 can cream of mushroom soup with a bit of water to thin. I warmed it in the same pan and it browned wonderfully & tasted great.

No Tomato Pasta Sauce

Reviewed: Jul. 28, 2011
What a great idea! This was delicious. I used garden beets and fresh carrots (steamed then cooked w/ spices then pureed) and added about 3/4 c cooked red lentils for protein (you can't taste them but they make for a filling meal). Had to add about 1/2 c water for consistency. I used rice vinegar as didn't have the other -- served wi/ veggie pasta and a side of kale, a sprinkle of old cheddar. Delicious!

Tuna Garden Casserole

Reviewed: Jun. 19, 2011
Great recipe! This came out a bit bland for my taste the first time but the 2nd time I followed another reviewer's suggestion and added chili powder. DH loved it, usually hates tuna cass. I just sprinkled about 1 tsp on the top of the casserole and it gave it great flavour! Also, will use 2 cans soup next time as I like a bit more sauce.

Calzone

Reviewed: Mar. 25, 2011
Amazing. It's so simple to make yet tastes absolutely wonderful. The second time, I brushed top with olive oil and sprinkled with coarse sea salt. I also added garlic powder and oregano to the dough. Will be a family favourite!

Strawberry Banana Smoothie

Reviewed: Jan. 3, 2011
We love this! Simple and good - the proportions make it not too thick or chunky. I would also add 1/4 c or so of orange juice to give it some zing.

Baked Hot Dog Sandwiches

Reviewed: Mar. 28, 2011
I've made this a couple of times - it's on my list of favourite comfort foods! Best way to eat hot dogs :) I add sauerkraut, and when I didn't have bread, have sliced potatoes & baked them (35 min at 400) and then topped with the filling & baked 10 min more at 350.

Easy Biscuit Mixture

Reviewed: Mar. 24, 2011
I first made this to use in Zucchini Pie on this site - worked perfectly once I figured out to cut down the oil in the pie recipe! I've also used it to make pancakes following a reviewer's suggestion (2 c mix, 1 c milk, 2 eggs) and they were wonderful - I usually don't like pancakes but these were light and not greasy. My go-to pancake recipe now :)

Apple Pie Muffins

Reviewed: Jan. 12, 2011
Yep, these were fantastic. I made them as written after reading several reviewers' urging to do so! Maybe a 1/4 c or so of extra apples. The muffin tin was well-greased but I had trouble getting them out. I think paper liners are the way to go when there's a streusel involved.

Loved this! Even DH can make it! Works just as well with lemon juice (diluted a bit)!

Tortilla Espanola (Spanish Tortilla)

Reviewed: Aug. 9, 2011
I love this -- had made many times with a different recipe. I stuck w/ only potato and onion, followed others' suggestions and cooked the potato and onion together, and didn't flip. It took 20 min or so until the potatoes were soft but was the best yet. I sprinkle w/ grated cheese, paprika and green onion before broiling. We like serving ours with a bit of mayonnaise! I'd love to try it with a bit of goat cheese mixed in next time.

German Apple Pancake

Reviewed: Mar. 28, 2011
Delicious. Wish I'd read the reviews first, I would have added a 2nd apple! I'm not a fan of nutmeg but I cut it in half and liked it at that level.

Potluck Special

Reviewed: Mar. 22, 2011
Made as written except I didn't rinse the sauerkraut. The flavour developed overnight. For an easy comfort food dish it was great!! I would like a little more tomato kick so may add some tomato paste next time, as well as a thick layer of mozzarella cheese on top :)

Raisin Chocolate Chip Cookies

Reviewed: Mar. 19, 2011
THese were fabulous. I didn't realize until I'd already started the recipe that I only had 50% fat mayo but they turned out great just the same. I sub'd shredded coconut (1/4 c) for the nuts as I didn't have any and really liked the taste. I should point out that there were 5 stars even though I burned them!! :) The edible parts were divine.

Ukrainian Red Borscht Soup

Reviewed: Mar. 2, 2011
I like this though I found it a bit bland, BUT I had to sub some of the sausage with hamburger so may have lost some taste. It needed salt! it's my first time making it though and I don't have anything to compare it to. Didn't have sour cream, either. By the way I used frozen cooked beets from the summer, just thawed them and diced them and added after the other veg were cooked. Seemed to work well. I think I would use stock instead of water to try to round out the flavor. It did make a LOT! I have about 3L in the freezer!

Steve's Whole Wheat

Reviewed: Jan. 26, 2011
I made this as written, it made a nice light loaf with a nutty taste. The humidity is low now in January but I will definitely decrease the yeast in the summer - every loaf rises too much then. But for now it was perfect. Edit: Since my review I've made this countless times; it's my favourite bread recipe. Even my gluten-intolerant mother in law can't resist it!!

Easy Tuna Casserole

I've made this twice now and I'm giving it 5 stars for being so simple and still tasting amazing. I used cr. of mushroom soup and onions carmelized on the stove. I am now going to go make it again.

Seafood Chowder

Reviewed: Nov. 5, 2010
*Sigh.* This is divine. I've been eating chowder all summer at a number of different coastal restaurants and if I'd found anything like this it would have blown my mind. I burned my mouth, couldn't wait for it to cool!! I halved it and will still freeze some - it makes a lot. The only other change was once the onions were partway cooked, I added about 2 tsp of flour to get a bit of a roux going - I like it a bit thicker. AMAZING.

Christian's Crazy Sherpa Potatoes

Reviewed: Sep. 16, 2010
delicious - I started onions/garlic/potatoes/carrots early, added garlic powder, threw in some beet greens for the last couple of minutes, and melted cheese on top. 2 servings made one vegetarian dinner!

Whole Wheat Chocolate Banana Bread

Reviewed: Aug. 3, 2010
I made as written. This came out looking great, great consistency - but all I can taste is NUTMEG! It seemed like alot but I like to make the recipe as written the first time. It's a disappointment - I can't taste the banana, chocolate or cinnamon...and my nutmeg certainly wasn't fresh :( I will make again though without the nutmeg and see what happens.
