An unqualified 5 stars!! (though I did follow others' suggestions and cut oil in half, made up liquid with milk, and cut sugar by 1/2 cup :) )

Cheesy Zucchini Casserole I

I made as written - wasn't crazy about this! Kind of flavourless and some soggy patches (maybe my bread chunks were too big...) but it's quick and it used up some zucchini!

Christian's Crazy Sherpa Potatoes

delicious - I started onions/garlic/potatoes/carrots early, added garlic powder, threw in some beet greens for the last couple of minutes, and melted cheese on top. 2 servings made one vegetarian dinner!

Zucchini Patties

Delicious! Made as written except used old cheddar instead of mozzarella. Make sure to squish patties a bit when you first put them in the pan!

Black Bean Spinach Pizza

Easy, healthy, delicious. DH used the words "wow" and "gourmet." I used blanched beet greens from the garden in place of frozen spinach. Made a simple no-yeast crust and didn't have any cilantro but it was still excellent. I found the onions came out a bit crunchy (oven may have been a bit low) so next time I'll saute the onions and garlic a bit first. Will also add a bit of garlic powder to crust. Can't wait to try this on some vegetarian friends!!

Clone of a Cinnabon

I made these for a crowd and they received RAVE reviews. I didn't have cream cheese so made a simple icing sugar glaze. I also let them rise once assembled for a loooong time due to a scheduling problem. Probably about 2.5-3 hours! They were described as light and fluffy, beyond normal cinnamon buns, into the realm of "gourmet." Not bad for a first timer, lol!

Singapore Noodles

I didn't have all the ingredients but it was still very good. I found there to be way too much curry and I only put in 2.5 tbsp. I agree that the sauce came out dry (perhaps a poor seal to my frying pan while steaming). A keeper though - will add sesame oil, egg, fish sauce next time.

Oven Fried Chicken III

Delicious - I also cut the mayo in half and used milk (but I wonder if this is why my coating didn't stick so well?). I would have liked the spices to come out more but my bread crumbs were homemade and not fine enough so that's likely why the issues. I also put the chicken on a baking rack over a cookie sheet (lined in wax paper for easy clean up). Chicken was tender and juicy.

Sweet Potato Potato Salad

4 stars only because I'd love it to have more 'zing'! This was delicious - I didn't know such a thing existed until I went to make potato salad and discovered we were just about out of potatoes. I followed other reviewers' suggestions and added a chopped apple and parsley. I also added a capful of vinegar but it still needs more zing. Anyway a keeper for sure.

Soft Sandwich Buns

My only change was to use 1/2 whole wheat flour. I thought they turned out great (except I was not so good at shaping hot dog buns! For the kind of rise I got with whole wheat flour I think they should have been about 1" thick by about 2" wide). Still, they had a lovely light texture and tasted great.

Rice & Beans (Haitian Style)

I tried to make this as written but used brown rice, 3.5 cups of liquid as other reviewers said it was too watery, and I didn't have a chile so just used dried red pepper. Boiled for the first 10 min then covered on low for 25 min. Came out absolutely delicious, will be making again.

Whole Wheat Chocolate Banana Bread

I made as written. This came out looking great, great consistency - but all I can taste is NUTMEG! It seemed like alot but I like to make the recipe as written the first time. It's a disappointment - I can't taste the banana, chocolate or cinnamon...and my nutmeg certainly wasn't fresh :( I will make again though without the nutmeg and see what happens.

Cornish Pasty

I didn't have any meat so veered from the original recipe but it was still delicious. Vegetarian version if anyone's curious - 1 extra potato, 1 extra carrot (cooked as described), 1 chopped onion, 3 cloves chopped garlic, fresh rosemary (about 2 tsp) and 2 tbsp or so parmesan cheese. I would have liked a bit of sauce though so will try to figure that out next time. Oh- I used 1 c whole wheat flour in the pastry and rolled as thin as I could - still had leftover filling, enough for maybe 2 more pasties. The pastry IS good. Check it during the 1st 10 min to make sure it doesn't burn.

French Crepes

These came out just as in the photo :) ...despite my only having 1/2 cup of milk! Made up the rest of the liquid out of water I used to rinse the milk carton. I added 1 tsp vanilla as they were for a dessert. Will make again for sure.

Balsamic Roasted Red Potatoes

These were very good, will definitely make again. I kept the pan from cooking the potatoes/garlic/onions, dumped the potatoes back in after cooking with the balsamic, and returned to cooking sheet. The 'good stuff' (garlic etc) came out too crispy for my liking so next time I'll replace into a glass baking dish w/ lid for last 10 min.

Black Beans a la Olla

Delicious! I didn't have quite enough black beans so added some frozen corn. Added an extra tsp cumin. Also we only had dried cilantro but still 5 stars! I simmered on low 45 min while the rice was cooking. I look forward to trying this again with fresh cilantro!

Baked Soy Lemon Chops

I didn't have time to do the full marinating time (only about 15 min on the countertop, stabbed the meat and squished it around so marinade would penetrate) and forgot to baste more than once in the oven (I was a bit confused about the directions but I put it in the oven IN the marinade, a no-no I'm sure but I figure if the bacteria in the meat are being cooked then the bacteria in the marinade are being cooked too ). Anyway - even so hubbie said to make sure to hang on to the recipe.

Magic Peanut Butter Middles

Made exactly as written - I only got 22 cookies :) I didn't do anything special to put them together, just kind of thumbed the outside around the middle and rolled to seal. I suspect I may have undercooked them a bit but they were excellent - 2 days and between hubbie and I they are gone!
