Baked Garlic Parmesan Chicken

Fabulous!! I followed the recipe except seasoned the chicken with Cajun seasoning mix before the olive oil step. This is the best oven baked fried chicken recipe I've tried yet.

Baked Hot Dog Sandwiches

I've made this a couple of times - it's on my list of favourite comfort foods! Best way to eat hot dogs :) I add sauerkraut, and when I didn't have bread, have sliced potatoes & baked them (35 min at 400) and then topped with the filling & baked 10 min more at 350.

German Apple Pancake

Delicious. Wish I'd read the reviews first, I would have added a 2nd apple! I'm not a fan of nutmeg but I cut it in half and liked it at that level.

Amazing. It's so simple to make yet tastes absolutely wonderful. The second time, I brushed top with olive oil and sprinkled with coarse sea salt. I also added garlic powder and oregano to the dough. Will be a family favourite!

Easy Biscuit Mixture

I first made this to use in Zucchini Pie on this site - worked perfectly once I figured out to cut down the oil in the pie recipe! I've also used it to make pancakes following a reviewer's suggestion (2 c mix, 1 c milk, 2 eggs) and they were wonderful - I usually don't like pancakes but these were light and not greasy. My go-to pancake recipe now :)

Potluck Special

Made as written except I didn't rinse the sauerkraut. The flavour developed overnight. For an easy comfort food dish it was great!! I would like a little more tomato kick so may add some tomato paste next time, as well as a thick layer of mozzarella cheese on top :)

Easy Peanut Butter Fudge

Tastes good but mine didn't harden up. I made a 1/2 portion of the recipe and microwaved in 30 sec bursts just to help with mixing...? Kind of like refrigerated butter icing!

Raisin Chocolate Chip Cookies

THese were fabulous. I didn't realize until I'd already started the recipe that I only had 50% fat mayo but they turned out great just the same. I sub'd shredded coconut (1/4 c) for the nuts as I didn't have any and really liked the taste. I should point out that there were 5 stars even though I burned them!! :) The edible parts were divine.

Delicious! I have no idea how the chemistry of this works but wow. I cut down on the sugar - 1/4 c in the batter and about 1/4 c in the topping. I found it just sweet enough w/o it.

Hasty Chocolate Pudding

I thought this was great - not being a pudding connoisseur, it tasted like chocolate pudding should, as far as I could tell! I used skim milk as well - it may have taken a bit longer to thicken - maybe 5 one-minute sessions? but tasted great. I think some people may be having trouble with the pudding maintaining a consistent temp - i.e. if you stir too long between the 1-minute cooks it might not be getting hot enough to thicken. Don't stir for any less than 2 min though.

Easy Garlic Broiled Chicken

What did I miss? The garlic ended up blackened in the pan, not on the chicken (and I baked it, only broiling the last 10 min!). It was all right but I couldn't really taste the sauce. I think the sauce would make a good marinade though, I think that's the way to go, then bake.

Fettuccine with Sweet Pepper-Cayenne Sauce

This was easy and quick - a good comfort food dish. I only used 1/2 tsp cayenne and that was enough for me. Next time I'll follow others' suggestions and add shrimp, a bit of white wine, and paprika. If I'm really feeling keen, I think it would be great with roasted red peppers (i.e. done in the oven and peeled). I think that would add a lot to the taste.

Veronica's Apple Pancakes

Not what I expected from the reviews (and the photo!). I doubled the cinnamon too but they came out bland. Lumpy texture & needed to be spread around in pan or they were too thick to cook. I cooked on med-hi heat but they browned too quickly while the middle was dense. Don't think I'll make again though I like the nutrition factor of the apple.

Well, I'm a casualty of the not-boiling-long-enough phenomenon. These still taste great but never hardened. I thought I boiled for 2 min but might have been just under. Harrumph.

Ukrainian Red Borscht Soup

I like this though I found it a bit bland, BUT I had to sub some of the sausage with hamburger so may have lost some taste. It needed salt! it's my first time making it though and I don't have anything to compare it to. Didn't have sour cream, either. By the way I used frozen cooked beets from the summer, just thawed them and diced them and added after the other veg were cooked. Seemed to work well. I think I would use stock instead of water to try to round out the flavor. It did make a LOT! I have about 3L in the freezer!

I really loved this twist on the chocolate chip cookie! The cookies have a nice texture and they're very sweet, just how I like 'em. I wanted to try this recipe to use up leftover glace mix from Christmas and it worked great.

Raisin Apple Muffins

I ate one just out of the oven and promptly had two more. Fabulous. I doubled the cinnamon as per others' reviews and it's perfect. I also left off the topping due to a lack of oatmeal in my cupboard, and yeah, it's still 5 stars! Can't wait to make them again.
