Brown Rice Bread

This made a lovely loaf! I added a bit of rye flour (~1/4 c) mostly for visual appeal ;) The dough was really sticky (it's July by the coast so the flour has a lot of humidity) - not sure if that was just me or if the recipe tends to be wet - remember to touch the dough during mixing & add a bit of flour at a time if needed. A keeper!

Bolognese on a Budget

five stars for easy & healthy! I found the taste too bland so added 2 cubes of veg. bouillon, 1 tsp Italian seasoning and a dash of Worcestershire sauce.

Cheddary Chicken Potpie

This was so good! I didn't haven any cream cheese so left it out and didn't miss it. I sauteed the onions & other veg first until soft, and added 1 tsp chili powder for flavor. I used the "Easy Biscuit Mixture" from this site instead of pancake mix and it worked great ! Will definitely make again!

Hearty Rice Salad

I've made this several times -- it's a great meal for when you think you don't have any groceries in the house! It's filling and a nice change from heavy meals. DH loves it.

Poor Man's Chicken Fried Steak

As other reviewers have stated, this was great! I didn't have any milk so used 1/2 can cream of mushroom soup with a bit of water to thin. I warmed it in the same pan and it browned wonderfully & tasted great.

Carrot Burgers

Fabulous! I had one less egg than I needed so added about 3/4 c cooked red lentils (I find they don't have any taste when used in other dishes) and the burgers held together well. Also omitted sugar and added 1/2 tsp curry powder. A keeper for sure, and very economical. I will try making them meatball-sized to serve in pita bread, and with a savory spice (e.g. oregano) I think they'd be great in spaghetti sauce!

Tortilla Espanola (Spanish Tortilla)

I love this -- had made many times with a different recipe. I stuck w/ only potato and onion, followed others' suggestions and cooked the potato and onion together, and didn't flip. It took 20 min or so until the potatoes were soft but was the best yet. I sprinkle w/ grated cheese, paprika and green onion before broiling. We like serving ours with a bit of mayonnaise! I'd love to try it with a bit of goat cheese mixed in next time.

No Tomato Pasta Sauce

What a great idea! This was delicious. I used garden beets and fresh carrots (steamed then cooked w/ spices then pureed) and added about 3/4 c cooked red lentils for protein (you can't taste them but they make for a filling meal). Had to add about 1/2 c water for consistency. I used rice vinegar as didn't have the other -- served wi/ veggie pasta and a side of kale, a sprinkle of old cheddar. Delicious!

Tuna Garden Casserole

Great recipe! This came out a bit bland for my taste the first time but the 2nd time I followed another reviewer's suggestion and added chili powder. DH loved it, usually hates tuna cass. I just sprinkled about 1 tsp on the top of the casserole and it gave it great flavour! Also, will use 2 cans soup next time as I like a bit more sauce.

Lentil Quiche

I thought this was great - a smart twist on quiche. Left out tomatoes bc I didn't have any but would add halved cherry tomatoes in future. I did the onions (added garlic) in a frying pan and next time would add the cooked lentils to the frying pan to cook off some of the water as the original recipe suggests. I used red lentils which cook up fast and kind of vanish in the dish (dH didn't even know it had lentils in it!). I think swiss cheese would be a great addition.
