Chicken In Basil Cream

I'm giving this 5 stars, as I had to make one adaptation due to ingredient "shortage" that might have made it not as good as it could have been. I would have given mine 5 stars, too, but I was cheating! I don't like to mess with a posted recipe, as it seems a bit out of order, but I didn't have fresh basil, and did have some homemade pesto, which is what I substituted. Otherwise followed exactly, and the whole fussy family just loved it. It's now definitely on the "serve to company" list. Thanks for a good (and easy) recipe! BTW, I never like to sub anything for heavy cream--it never works out quite the same. It's only once in while ;) Just bought a bunch of fresh basil to try this again as written. It's a keeper!

Easy Tuna Casserole

Love this! Only gave this four stars because it was too easy! Didn't seem fair to those who suffer over much more complicated dishes. That said, if you're quick in the kitchen, and already have water boiling for macaroni, the whole thing is oven-ready in ten minutes--five if you don't include cooking the macaroni. Thanks, LM--it's a great last minute "throw together" after a too-long day. Will do this again--and again. Yay, comfort food!

Yummy Pork Chops

Liked this, but not sure I'd make it again. Made no changes. Maybe it's because I make my own salad dressings, and perhaps my Italian dressing is a bit "blah" or something, but despite the fact that it was good enough, it just wasn't as good as the raves suggested. It's nice, easy and quick, though.

Jumbutt Skillet Scramble

This is "giambotta" in Italian, which is where I would guess the "Jumbutt" came from. It is one of those recipes where you may throw just about anything in the pan. Leftover cooked meat, any vegetables, eggs (or not)--whatever. We always toss in some peppers, onions, pepper, fresh basil and oregano, but it's not absolutely necessary. It's great however you like it.

Sweet & Sour Brussels Sprouts

Prepared as written, and entire non-brussels-sprouts-eating-family loved it. Perhaps not for "purists", but for a disparate group of picky eaters, very good.

Sherry Sour Cream Chicken

Tried this the first time, exactly as written, and everyone at the table loved it. Since then, I've substituted whatever vermouth/wine I had on hand, including marsala, and cabernet--always good. I've also substituted other fresh herbs (e.g. tarragon), used dried herbs when nothing fresh on hand, tossed mushrooms into it--fresh or canned, depending on what was in the house at the time. My oven tends to run hotter than it should, so 30 minutes was just right. Never any leftovers! I'd have given it five stars, except that I try to reserve that rating for REALLY outstanding dishes. Four stars? Great.
