Fettuccine with Sweet Pepper-Cayenne Sauce
AWESOME DISH!!!! For those of you who commented on the sauce being runny... yes, that is true. But we just added a tad more sour cream and a little more cheese and that fixed that problem. For those who commented on the cheese or sour cream curdling... that is the nature of parmesan cheese. Parmesan cheese is a cheese that does not get creamy, so that's that. The sour cream curdling? well that's a user error, maybe your heat wasn't up high enough, we did not find this to be a problem. I did make one small change, we added a little more cayenne, but we LOVE spicy... add less if you don't like spicy, this is a spicy dish. The flavor was perfect. We only used one bell pepper, one was plenty for us. And we like our pepper less crunchy, so we sauteed the pepper a little longer with some olive oil. I added the cheese to the pan sauce and let it get melty in the pan, it blended well and it made the sauce thicker. This is a very easy and delicious dish! We added grilled chicken hot off the grill... mouth watering and much more filling with the added chicken! I cannot wait to make this again!!! i'm ready for our leftovers ;)

Italian Meatloaf in Zucchini Boats
This is "ok" as is. I made it exactly as the recipe says. The second time making it i added a few things of my own. Red pepper flakes, extra garlic (a heaping teaspoon), parsley flakes, and oregano. I only used half of the olive oil to saute the onion and garlic... the original recipe calls for way too much olive oil. Also, for this amount of meat, i needed two zucchini's, to make four boats. When i seeded and scooped out the zucchinis i chopped up the zucchini innards and added it to the meatloaf mixture... extra helping of veggies for a little bonus of healthy goodness and couldn't even tell it was in there. Otherwise, this is a great recipe. Just a little bland for our taste, but with a few minor additions it was fantastic.

Libby's(R) Famous Pumpkin Pie
This is the same pumpkin pie my mom always made... reminds me of home ;) FANTASTIC! I like to cook my own pumpkin, so sometimes i'll use fresh pumpkin instead...ounce for ounce as the recipe calls for, works perfect every time! I think it tastes better with fresh pumpkin, but that's because i'm a pumpkin fanatic! Really, this is a great pie no matter how you slice it ;)
