Pet Cookies

My dogs adore these- gave them out as gifts last Christmas and everyone else said their dogs loved them, too. The cats were interested while they were cooking, but seemed intimidated by the size. This time, I'm going to try making some that are pea-sized for the cats. I never had a problem with them spoiling- the dogs go through them too fast!

Cappuccino in a Jar

I used nonfat dry milk in place of the creamer, and added a tablespoon of instant espresso to make it more like coffee shop cappuccino. It tastes fabulous, but if you add the espresso, you will probably want to use 2 tablespoons of mix per 6 oz. hot water. We just had a severe ice storm in North Carolina and were without power for three days in temperatures dropping below 20; I'd just finished my first batch of this (intended for gifts), but we heated water on a camp stove and lived off of this stuff. It's wonderful in the cold!

Creamy Pumpkin Pie

I'd never cooked with fresh pumpkin before, so I was very nervous about this recipe. I used a few shortcuts, including store-bought crusts (I used graham-cracker crust instead of regular pie crust). I used what I thought was a medium-sized pumpkin, but I ended up with WAY more pumpkin flesh than I needed. I also had more success processing the whole mixture in a blender than with a potato masher. Halfway through cooking, the cookie sheet holding my 2 pies slid off the shelf when I opened the oven. I scooped the pie filling back in (no way was I wasting it after all that effort), and continued baking. They were kind of ugly in the end, but they tasted heavenly. My husband (who didn't prep the pumpkin) has asked that I make it this way from now on, instead of using canned pumpkin!

GA Peach Pound Cake

It tastes excellent! I had to bake for 80 minutes, but it's rainy and humid here today. Also, before I poured in the cake batter, I lined the prepared pan with 3/4 cup of toasted pecans.

Mock Tuna Salad

I've made this a few times and really liked it, but last time made a couple of modifications. First, as someone else mentioned in a review, I used lowfat plain yogurt instead of mayo. I also added 1 tsp. of capers, and used india relish instead of sweet pickle relish (it's just a little spicier). I had to go back and add about a teaspoon of mayo; the yogurt didn't do it for me. But I guess it reduces the fat content significantly to use mostly yogurt and a little mayo. Will definitely make it again!

Lentil Loaf

I made this for my husband, who usually hates lentils and is a big meat-eater. He took one bite and said, 'surprisingly, this is really, really good'. I loved it as well- I left off the crumb topping and used a powdered gravy mix instead of the soup mix. I microwaved leftovers with a couple of tablespoons of water, since they dried out after a few days. I'll be making it many more times.
