Greek Island Chicken Shish Kebabs
Awesome! My new favorite Greek recipe for summer. I used mushroom, zucchini, onion and red pepper. The tomatoes I stuffed with a blend of feta, roasted garlic and basil, and served as an appatizer. I also de-kabobed them and sprinkled with feta, everything better with cheese! the flavors of the marinade are so amazing they should be brushed on everything.

Mahi Mahi with Coconut Rice and Mango Salsa
I think it wold have been 5 stars if I hadn't used real coconut milk. the rice didn't have much flavor but my 9 year old asked me why I didn't buy more mahi mahi! It was a very welcome change to our regular routine and didn't take too much extra shopping time or prep time. This is a great one to mix things up, or impress the in laws!
