Blackened Tuna Steaks with Mango Salsa

This was great! I did 1/2 the cayenne pepper, and broiled the fish rather than pan-frying it, but other than that followed the recipe to a T. I have also done it (on a separate occasion) with ilapia because the store didn't have any good tuna and it was delicious as well! Big crowd pleaser!

Rosemary Ranch Chicken Kabobs

Even my husband, who is not a rosemary fan, loved these! His words were, "If you made this every day, I wouldn't complain." I halved the marinade and used 1.5 breasts cut into strips and baked them in the oven since we don't have a grill. So juicy and delicious!

The Best Rolled Sugar Cookies

I have made this recipe as described as well as with an extra 1c of powdered sugar. Both ways are excellent - it just depends on if you are going for a sweeter cookie or not. Do also use powdered sugar in place of flour when rolling the dough out. The cookies are firm yet soft in all the right places. Yum.

Sugar Cookie Icing

SO good! For ease of mixing, mix the extract and milk and then add in the powdered sugar. You may need a tiny bit more milk - it will be a smooth paste-like consistency. Then add the corn syrup and you are good to go! Liquid food coloring will thin it out quite a bit, but it thickens as it stands. If it gets too thick, just add a few drops more milk.

Rhubarb Strawberry Crunch

I know that many comments refer to the huge amount of topping, but I have to say that that is my favorite part! This recipe, made as-is, deserves 5 stars. No changes necessary in my opinion. Yum!

Tasty Lentil Tacos

I wanted to like this more than I did, but it could have just been expectations vs reality so no real points off for that one. My reason for giving it 4 stars instead of 5 is because it was extremely watery! I followed the directions exactly and even after letting it simmer uncovered it was still more like a stew/chili than a taco. I ate it that way anyways and then strained the rest in a colander, which resulted in a much better consistency. I'll probably reduce the broth next time by 1/3 cup and see how that goes.

Apple Raisin French Toast Strata

I have to say that I wasn't overwhelmed with this recipe when made as stated. It seemed mushy/gritty because of the cream cheese. I also tried reducing the amount and/or making it with the cream cheese spread on the toast before cutting and had the same results, and also tried reducing the # of eggs to 6. It tasted better cold than warm, as well. If I were to make it yet another time, I would for sure eliminate the cream cheese to see if it helped the strange texture.
