Cinnamon Sugar Biscotti

Brownie Biscotti

This is pretty good biscotti. I omitted the nuts because I have a lot of friends that are allergic. It's a little more dense than other biscotti I've made, but it's still very chocolaty. Because it's so dark, it can be easy to burn. Watch closely!

French Toast Souffle

This recipe is okay. It's not a flavorful as real french toast. I significantly decreased the eggs and milk and it came out a little dry. But nothing a little syrup couldn't fix.

Seven Layer Tortilla Pie

This recipe is absolutely fabulous! I made it for my friends who are vegetarians and they loved it. My carnivorous husband loved it also. I used lower fat cheese and sour cream and used non-fat refried beans and it was a lower fat recipe!

Six Can Chicken Tortilla Soup

Wow!!! I never expected this to be so good! My husband, who is not a soup person, ate 2 bowls! I added some garlic powder for some more flavor. I'm sending this recipe to all my friends!!!!

Spinach and Strawberry Salad

I love the dressing for this recipe! I make it all the time without making the rest of the salad. You can also make this salad with blueberries, raspberries, or manadrain oranges! A real favorite!

You will never believe a soup that is so easy can be this good! I would recommend adding a 1/2 teaspoon of garlic powder to give it a little more seasoning.

Butternut Squash Soup

This is a very good choice for first course on Thanksgiving! If you're making it for a lot of people though, it is quite an undertaking. I highly recommend the roasting of the squash beforehand and only using 1/2 the cream cheese. I also used lite cream cheese and it still had a very creamy consistency. I'm so glad I have leftovers!

Mexican Chicken Corn Chowder

Wonderful! I substituted the half and half with a can of evaporated skim milk. I also used 2 cans of chicken broth and an can of regular corn in addition to the creamed corn. While I like spicy food, I didn't want the green chiles to over power the soup, so I only used half of them. This is a great winter soup! Excellent!

Chocolate Cherry Biscotti

I used dried cherries instead of candied ones and they were excellent. I gave them as gifts for Christmas and my grandmother sent me back her empty jar so I could refill it! Yum!

Chili-Lime Chicken Kabobs

This recipe was delicious! I followed it exactly and doubled it so I'd have enough to marinate all the veggies in. I didn't exactly taste either the chili or the lime, I just tasted that it was delicious! My husband said he could definitely taste the chili though. I wouldn't recommend marinating it longer than 4 or 5 hours though b/c I marinated for 4 and the chicken was starting to fall apart...the combination of lime juice and vinegar really breaks down the chicken quickly!

A Catering Company's Marinade

Very tasty! I marinated tuna steaks in this for a few hours and added 3 tablespoons of balsamic vinegar also. Great flavor for the tuna and helped the tuna to retain it's moisture. Would definitely make it again.

Easier Chicken Marsala

Yum! This was so easy and tasted just delicious! One thing I did to make more sauce was to add 3/4 cup marsala wine and 3/4 cup beef broth. I also added extra mushrooms (portobello work great!) b/c my husband and I love them so much. I am passing this on to all my friends!

Sesame Green Beans

This was pretty tasty, the only thing was I really couldn't taste the sesame seeds. Fortuately I had them on hand, so I hadn't made a special trip for them. I also added a 1/2 teaspoon of minced garlic to give them more flavor.

Portobello Mushroom Burgers

Absolutely delicious! My husband was surprised at how meaty and satisfying these were. I used fresh basil as opposed to dried and they turned out great. I also only marinated them for about 10 minutes since I have had experiences in the past where the mushrooms soak up too much of the vinegar and end up tasting sour. A great vegetarian alternative!

Absolutely the Best Chocolate Chip Cookies

I was not that impressed by this recipe. I was expecting something wonderful from all the reviews but was disapointed to find out they were just regular chocolate chip cookies. They tasted fine and my husband ate them up, but he does that with any cookie. I think I prefer the Betty Crocker or Nestle Tollhouse recipes to this one.

Cranberry Apple Pie I

Very tasty! I would recommend either having two pie shells ready or making the remainder of the filling into a cobbler. I just put the remainder of the filling in a cake pan and used the topping and popped it into the oven with the pie and it was just delicious! I'd make this recipe again in a heartbeat!
