My Best Clam Chowder
I made this last night for dinner, it was my first attempt at clam chowder. First off, I left out the carrots/celery per our taste. I cooked the onion in bacon fat, which definitely gave flavor. I wish I would've had bacon (not just fat) to put in the soup, it would've been delicious. I didn't have red wine vinegar, so I used balsamic. After reading reviews, I only used 1/4 cup flour and 1/4 cup butter for roux, and it was perfect consistency. Overall, this was pretty good, I will add more clams next time!!
