Chocolate Chip Cookie Ice Cream Cake
This is such a great recipe and really lets the user be creative! I made this for my best friends birthday and was a little bit nervous. I only had 5 total hours to make and chill the cake, but it turned out GREAT! I used a brownie for the bottom. I baked a brownie mix in a springform pan. I then added chocolate brownie ice-cream, popped it in the freezer for an hour, and added cherry chunk ice cream on top. I added the cherries, hard hershey shell for decoration, and popped it bake in the freezer for about 3 more hours. It turned out beautiful and SO yummy! My only issue that I had was getting the cake out of the springform pan. It wanted to stick to the sides, but with some maneuvering and a knife around the edges, it was just fine! I will definitely be using this and experimenting some more in the future!

Grandma Ople's Apple Pie
I found this recipe a couple of years ago and have been using it for any big holiday ever since! My whole family RAVES about this pie and even my boyfriends mom chooses mine over her own mothers pie! :) I do tweak a few things, but the basic idea is the same. The yummy carmel sauce is definitely the best part! I add cinnamon, nutmeg, and ginger to the apples (about a teaspoon each) as well as half of the carmel sauce before they go into the bottom crust. I then add my lattice crust and pour the rest of the carmel sauce over-top. This ensures that all the apples are evenly coated and don't get too dry in the baking process. Make sure you bake this with a cookie sheet (lined in foil) underneath it! Like most fruit pies, it definitely bubbles over! This is pretty hard to mess up, so experiment with the spices and have fun!

Hot Artichoke Spinach Dip
I made this recipe twice within a couple of weeks and it turned out differently both times. The first time, I thawed and drained the spinach just as instructed and it turned out SO TASTY! It was bubbly and thick! The second time, I forgot to thaw my spinach and popped it in the microwave for a couple of minutes then just mixed it right in. I did not take the time to drain it and the dip turned out a little too watery for my tastes. Make sure you THAW AND DRAIN your SPINACH! Great, easy recipe overall and I will definitely be using this in the future!
