Good Old Fashioned Pancakes

I've been making homemade pancakes my whole life and always looking for the perfect restaurant style pancake, thick and fluffy. This is it! I decreased the amount of salt by half and they were absolutely delicious. This recipe is a keeper.

Quick Chicken Piccata

Wow! What a flavorful dish. This is the first time I cooked with wine, well, by putting it in the food, and capers too! Tasty little things they are. I followed the recipe exactly. My husband loved it. This recipe is a keeper.

Simple Beef Pot Roast

This recipe is a keeper. In my experience, unless it's a prime rib roast every other roast recipe I've tried has come out tough and dry. This one was fork tender and deliciously flavourful. My husband was very impressed as was I. Finally, a pot roast recipe that is everything it said it would be. I followed the recipe exactly. Don't think you need liquid to make it tender. The slow cooking on the bed of delicious chopped veggies produces it's own juice. Enjoy:)

Guacamole

DON'T BE FOOLED by other guacamole recipes. This one is THE BEST, by far, EVER!!!! Red onion is delicious in this recipe. I must admit, several others have mentioned adding cumin so I think I might try that next time I make this.

Baked Spaghetti I

This Baked Spaghetti was delicious. My husband loved it. He even heated some up for breakfast the next morning! I must say that I was a little skeptical about the mushroom soup but it turned out to be a fabulous addition to spaghetti. I love spaghetti sauce but sometimes find it a bit strong/acidic so by adding the mushroom soup it made the sauce creamier and gave it a really nice flavor. This recipe is a keeper.

Sauerkraut Salad

I made this salad to take to a BBQ. Those who didn't like sauerkraut were skeptical at first but after everyone else was raving about how good it was they had to try it! It was a real hit and I came home with an empty bowl.

Coconut Cream Pie

Mmm, delicious. First time I ever made a cream pie from scratch. Turned out fabulous. I was a little apprehensive about some of the mixture sticking to the pot and then ending up with little lumps but once the coconut is added you can't notice it. You must stir this mixture at all times to avoid this. Topped it with whipped cream and sprinkled some toasted coconut on top. I will most certainly make this again.

BLT

Anything is better with bacon!! I like to add a very thin layer strawberry jam to the side of the toast that the bacon in next to. There's just something about the sweetness of the jam and the saltiness of the bacon. Tomatoes on the side with the mayo and salt and pepper. Yummy!

Scott Hibb's Amazing Whisky Grilled Baby Back Ribs

WOW! These ribs are amazing. I'm not a big fan of ribs but these were incredibly delicious. The slow cooking is the key as the meat is so tender. I was leery about the amount of ground red chile pepper but it was perfect. I didn't have any molasses so that was the only difference as far as following the recipe goes. I will definitely make these again.
