About this Cook
I cooked professonally in NYC of 20 years. I owned a catering business for 5 of those years. Taught at the NY food and Hotel management school. I was lucky enough to work with some of the top chef and cook book writers, before chefs were stars. Now I work in Health care in food distribution and only cook for my family . The toughest critics the most rewarding cooking.
My favorite things to cook
Italian, desserts, Mexican, chinese. Dinners that I know the family and friend will love. Dinner parties, food to specifiaclly go with wines we have collected. slow cooking during the week. Fresh clean foods, healthy foods that taste great . Grilling, we grill everything in the summer. Then of course southern cooking and seafood!
My favorite family cooking traditions
I love to come home open a bottle of wine turn on music and cook three to four recipes at a time. Making food for my family that makes them say , wow this is so good, then sitting around the table talking . The best family time is after dinner and talking. Cookies at Christmas, bringing our best dishes to a family event. The kids love our family events , because we all bring something and it is all so good. I have 4 sisters , and we all cook . No one brings a dish that has been store bought. Big italian family lots of Family traditions. The king crab night at my parents occasionally. My parents usually have italian sauce & pasta going, good chesses. Italian sausage in thie kitchen. canolis. we all love canolis:) Making our own ravioli. using the plastic tub my parents saved from when we were babies. To mix the dough in.
My cooking triumphs
Working as 1st chef to many cook book writers and chefs to show an audience the "How to" from the books. Teaching cooking , baking, cake decorating and catering in NYC. Galantine Chicken. Learning from every single thing I make . teaching my daughter to cook and see it as as joy not a chore. The best one ever is sharing the cooking , laughing, music experience with my husband and children.
My cooking tragedies
Too much Prociutto in the Veal salimboco. I made a Gruyre cheese sauce turned into a thick globby mess. over baking puff pastry more times than I can count. breaking my cuisinart twice when adding one egg at a time ,making pate' a choux. Leaving the gas on a commercial oven when the pilot wasn't lit. BLEW UP in our faces! we were ok, but really shaken up. Hahaha , laughed like crazy once we collected ourselves.

Butter Brickle Frozen Delight
I read the reviews and knew it would be an awesome dessert. Everyone loved it, I kept it frozen until we served it. Then I slid it onto a cake plate & the caramel started to drip down the sides, even my weight concious sisters had to have a piece. The whole family loved it. I will definetly make this again! It also stayed pretty firm standing at room temp.
