This rice gives Mexican restaurant rice a run for its money. This was terrific. I did make a couple of changes. I doubled the recipe but still only used 1 can of tomatoes w/ chilies. Also, as another reviewer stated, sauted the onion, peppers, garlic first. Also added 1 finely chopped jalepeno pepper and 2 Tbsp. cumin. I used canned chicken broth instead of water. Everyone loved it. We served with with Chicken Enchilada Casserole II recipe here on Allrecipes.
