The Best and Cheesiest Artichoke Dip

I saved this recipe to my recipe box 3 years ago. I have made this at least a dozen times since then. Follow the recipe exactly. This dip is fantastic. My wife was a diehard spinach dip person until I made her this.

Easy French Dip Sandwiches

Rosemary and Garlic Simmered Pork Chops

This was a pretty good recipe. I used fresh rosemary instead of the dry and simmered the chops for 1 hour. We will have this again.

Spanish Rice II

This rice gives Mexican restaurant rice a run for its money. This was terrific. I did make a couple of changes. I doubled the recipe but still only used 1 can of tomatoes w/ chilies. Also, as another reviewer stated, sauted the onion, peppers, garlic first. Also added 1 finely chopped jalepeno pepper and 2 Tbsp. cumin. I used canned chicken broth instead of water. Everyone loved it. We served with with Chicken Enchilada Casserole II recipe here on Allrecipes.

Chicken Enchilada Casserole II

This turned out fantastic. Everyone loved it. I did follow a couple of the suggestions from other reviews. I used only 8 oz. of sour cream and I used corn tortillas instead of flour. Also, instead of the jar of salsa, I used a can of diced tomatoes with green chili as well as added 2 Tbsp. each of cumin and chili powder. And instead of chili beans, I used black beans. One suggestion, don't be afraid to kind of double up on the tortilla layer. It soaked up the juices and made a very nice texture.
