Scrumptious Beef and Potato Casserole

This is a delicious one dish meal! My husband said its definitely a keeper! I made a few minor changes: used olive oil rather than shortening beef broth instead of water added 1 chopped green pepper & 4 cloves minced garlic to onion and beef while browning sprinkled simmering beef with a dash of marjoram, fresh ground pepper & pinch of thyme thickened beef mixture with a tbl of corn starch 3/4 c sour cream 1 c milk used ritz crackers I was concerned the casserole would be too soupy so cut back on the liquid ingredients. It was the perfect texture for our taste. I will definitely make this regularly. Thanks for sharing the recipe!

Baked Potato Casserole

AMAZING! This is my go-to recipe when I am tasked to bring a side dish to a pot luck. I am now specifically asked to bring my "heart attack potatoes" to most functions, and have had many requests for the recipe. Several of my friends have made this for family gatherings with the biggest disapoointment being there are never any leftovers to bring home!A definite keeper...thank you very much for sharing!

Tex-Mex Turkey Soup

This soup is absolutely delicious! I made it exactly as stated. My husband was very leary at the thought of turkey used in a mexican recipe, but he ate multiple helpings and even raved about it to some friends with whom I had shared some of the soup. Definitely a keeper recipe! thanks for sharing!

Red Potato Salad

Fabulous recipe! In the interest of eating more healthy I substituted fat-free greek yogurt for the sour cream and used Smart Balance mayonnaise. I quadrupled the dijon mustard and left out the eggs. My husband and son, who are potato salad geru's, absolutely loved it! They did not suspect it was made with healthy alternative ingredients! (I have attempted the switch many times and they always taste the difference.) This recipe is a definite keeper! Thanks for sharing!

Sangria! Sangria!

Excellent recipe! It was a huge success at my son's graduation party! I used a low cost merlot and cherry brandy, skipped the sugar and offered seltzer on the side for anyone who wanted to add it. I quadrupled the recipe so I would have enough to last the entire gathering...which I didn't! Many asked for the recipe before departing the event. I have made it since using apricot brandy, which was also wonderful. I will caution you that if you have left-overs, remove the fruit. If it sits more than a day, the skin's give it a bitter aftertaste. An excellent summer-time offering! Thanks for the recipe!
