About this Cook
I'm a mom who's back in college and I love to cook for my family when I have the time. I like to take pieces of new recipes and tweak them and make them suit our likings to make them our own. We like 'em hot! I like cooking and baking, but most of my time in the kitchen is spent on meals. My husband, kids and I have dirt bikes and like to ride together when we can.
My favorite things to cook
Family Favorites: Soups (a friend's ravioli soup, spicy taco soup, spicy chicken taco soup, chili, tom basil); mexican dishes (enchilada casserole, variations of diff. spicy enchiladas, tostados, tacos); jambalaya with sausage and beans; lasagna; stuffed jalapenos, pico de gallo, quacamole; mini fruit pizzas. We have our favs, but I also love learning new recipes and playing around with them.
My favorite family cooking traditions
Camping out at the lake, my Papa would fry the best eggs in the morning. For dinner, my Granny would fry up the best taters you've ever had. My mom's pork chops and sauerkraut are what I request for my birthday dinner. As for traditions... my mom, sister-in-law, & our kids make dozens of cut-out sugar cookies with Royal icing from scratch for Christmas each year... yum!
My cooking triumphs
I have made for many years a homemade salsa that my family keeps telling me I need to sell. And hubby tells me if my career doesn't work out, I can make pesto chicken stuffed puff pastry. What do they know?
My cooking tragedies
Catching my cast iron skillet on fire the first time I used it...

Pesto Chicken Florentine
This was awesome. I did want to mention canned spinach works too. I drained mine and only used about 1/4 cup. I would never have thought to use alfredo with pesto. So yummy! Thanks for sharing.

Spicy Sausage and Rice Casserole
YUMMM! Did it on the stove and it cooked in no time. Added dash of oregano, pepper, basil, tony cacheres, salt, chili powder and paprika like someone else suggested. Will keep it with my favs!

Tuna Fish Salad
I love this tuna salad. I never knew how to jazz my boring salad up. The only things I add to your recipe is two chopped dill spears and two chopped hard boiled eggs. Thanks for sharing with us!
