Hard Chocolate Glaze

I had a batch of pecan pralines that tasted good but didn't look pretty, so I used the suggestion of another reviewer and used half a stick of butter and 5 ounces of chocolate chips, melted in the microwave for 2 minutes at 80% power, then stirred. I put it in a little bowl and dipped the candies to coat the tops. Now they are so pretty. And taste good too.

Peach Coffee Cake II

Wonderful! I don't have sour cream so I used skim milk. It made a wonderful smooth silky batter. No trouble spreading it in the pan! And it baked up soft and fluffy. Tastes great. I also didn't peel the peaches. I never do for cobbler either. I will certainly make it again. Thanks for the recipe.

Corn Fritters

Very good. Mine turned out crispy and done all the way through. No doughy center like some said, maybe because I made them small and cooked them really well done. I cooked them in my little fry daddy and they turned out just great. But one batch makes an awful lot of little fritters.

Easy Mini Quiches

This was more like a mini cheese muffin, but it tasted pretty good. I added caramelized onion. I doubled the recipe and it made 60 mini-muffins.

Banana Nut Bread III

Since we are a family of two, I made these as muffins so I can freeze some for later. It was an easy recipe and turned out great. I didn't measure the banana, just used three medium ripe ones and it worked fine. Baked 18 minutes as someone else suggested and it was perfect.
