P.J.'s Fresh Corn Salad

My husband couldn't quit eating. Instead of Italian Dressing, I used a Raspberry Walnut Vinegrette, which is one of our favorite dressings. It was very good combination of vegetables & dressing

Excellent. What makes these recipes so exciting is one's own experimentation. I agree with the glaze idea as superb. I read others found the meatloaf mushy and somewhat bland for them. So I used seasoned stuffing mix instead of crumbs or crackers. This gives it flavor & absorbs excess moisture. Also I added a can of drained Mexicorn. That just makes it pretty. I put the loaf on a baking trivet inside an aluminum foil-lined casserole dish so the grease would drain and cleanup would be a snap. Great recipe.

Sweet Restaurant Slaw

This is terrific. I love coleslaw and always made it with store-bought dressing to which I added sugar. This recipe is simply the best! Hubby even eats it which he didn't the one with store-bought. I agree substituting rice vinegar is a great idea. Eat it up.

Balsamic Roasted Pork Loin

If the smell of Balsamic vinegar is strong, then you are using an inexpensive brand. Balsamic vinegar has to be aged to acquire a mild yet yummy taste and smell. A very good one is DeLallo Aged Balsamic Vinegar. It costs a couple dollars more, but it is soooo good. Rather than throw away a few dollars, enjoy something for a couple dollars more.
