Fried Zucchini

This is the best. Tried other recipes. Tried just flour or just cornmeal dip in egg first but this is the one. Just a hint of garlic. Definitely let sit a bit before frying. Yummy!

Chicken Chimichangas

Easy and yummy!! Used Ortega taco sauce mild instead of enchililada sauce and left out the olives. Also used Minute Rice and followed package directions. Topped with sauce and sour cream. Had refried beans with shredded cheese and sauce on the side. Should have taken a photo. Ate it up instead.

Ham and Mushroom Baked Eggs

Tried this for a tailgate with a breakfast theme. Added green peppers as well. Easy and takes what you already should haveon hand. Will ddefinitely make again.

Party Pinwheels

Made these to take to a trivia night. Had to leave some home for husband and sons to enjoy. They were a hit. Actually get better and less salty tasting the longer they sit, so I recommend making the night before or at least chilling them even longer than it calls for. Will definitely make again.

Fajita Seasoning

This was very easy to make. Had the seasonings on hand. Made two separate batches and added a 1/4 cup water to each and then marinates separately beef and chicken while I cut up onions and various peppers. Husband liked it and he is very picky.

Chicken Parmesan

This was easy and excellent. Used all mozzarella because that is what I had. Served with spaghetti noodles so had extra sauce for the noodles as well. Want to try it with eggplant. Yum! Plus served 3 people (2 were teenage boys) with 2 pieces leftover (started w 6 pieces of chicken) for less than $10. I love low budget meals that taste great and are filling,

Chicken and Vegetable Stir-Fry

Fried Rice

Easy and best fried rice recipe I have used so far. Had cooked more rice than what the recipe called for, so I probably could have added another egg. Would have been good to add some shrimp or chicken and serve by it self. I served it with the Chicken & Vegetable Stir Fry recipe on found on this site too.

Beef and Broccoli

Used beef stew meat because that was what was on hand. Marinated meat in soy sauce overnight. Cut pieces lengthwise for flatter and less chunky pieces. Use recipe as is but add a little Kitchen bouquet to darken the sauce. It was delicious and probably would be even better with the better cuts of meat.

Cajun Crawfish and Shrimp Etouffe

This was easier than I expected. We used frozen cooked shrimp, peeled & deveined; just had to take the tails off. Recommend making sure your veggies are prepped before starting the roux. It was delicious. Wish we would have doubled the recipe. Served it over rice.

Chicken With Mushrooms

Awesome!Easy and quck to make. Minced garlic and sauteed with mushrooms on griddle with light cooking spray. Rubbed bottom of dish with garlic also. Used chicken bouillon instead of broth. Loved it!

Cocktail Meatballs II

The Best Chicken Fried Steak

I used the vinegar with milk method for the buttermilk substitute and it worked liked a charm. The leftover steaks (if there are any) are also good as a sandwich with ketchup the next day. I didn't use as much hot sauce, but I think I will next time to give it an extra kick.

Peach Cobbler VI

Awesome! Used 1/2 the cobbler batter for a peach cobbler (1 can of peaches) and the other for a cherry cobbler (1 can of cherry pie filling). Serve cherry cobbler with chocolate ice cream. Yum!
