Marinated Broccoli

This was very good, even my 3 year old loved it! I only had apple cider vinegar so I used 1 tbsp of that and 1 tbsp of white wine (moscato) instead of the water. I also added a litte bit of sweet onion to it. It was awesome, thanks for the recipe!

Honey Mustard Tofu

This was delicious! I chopped up a sweet onion and stirfryed it with the butter first. Also I just used plain white flour since that's what I had on hand, and I only used about 1 cup of it. I served it over noodles and it was soooo yummy! Even my meat loving hubby devoured it.

Eggless Peanut Butter Cookies

I went back and double checked the recipe to see if I left something out or did something wrong but I can't see any errors. These turned out to be the ugliest cookies I've ever made and looked nothing like the picture. They were VERY flat when done. That being said, they were delicious, and that's all that matters to me.

Portobello Penne Pasta Casserole

Okay I made a few changes based on what I had but this was wonderful. I had pasta last night so I made this with saffron rice. Also I sauted a vadalia onion with the mushrooms. I used fresh spinach and cooked it with a couple of tablespoons of lemon juice and used one cup milk and a half of cup of heavy cream. This was DEVINE.

Creamy Dill Cucumber Toasties

I just use one brick of cream cheese (no mayo or sour cream added) and add a half bag of the zesty italian dry dressing. Zesty is the key. Mix the cream cheese and dressing together and let sit overnight to blend the flavors. Than spread on deli sliced mini rye bread, sliced cucumber on top with dill weed and seasoned salt on top. Yummy!
