Mexican Rice III

Caramelized Spicy Pumpkin Seeds

I tossed the seeds with butter because I was out of cooking spray and a little salt and garlic powder. I added a little extra cinnamon to the spice mixture, added nutmeg and substituted cayenne with mexican chile powder because that was all I had. I carmelized butter and brown sugar together before adding the seeds. It came out great! :)

Brownie Biscotti

These turned out fantastic with great flavor! I added a half of a cup of cocoa instead of a third, a little salt, and did not use walnuts. I cut them while still warm (about ten minutes after the first bake), then baked them at 300 degrees to keep them from burning and drizzled with white chocolate. Thanks for a great recipe! :)

Salsa de Eppinette: A Three-Pepper Inferno

Great salsa! I didn't have the carrot or green onion, so I just threw in a little extra white onion. Also added extra garlic and used italian stewed tomatoes because that is all I had. AMAZING! :)

Chocolate Cakes with Liquid Centers

Perfect for the chocolate lover! I baked it for ten minutes and it came out easily and had a great gooey center. I think I might try buttering and dusting the ramekin with cocoa powder instead of flour to get rid of the whitish layer it left on the cake. Thanks for a great recipe!

Creme Brulee

The taste was amazing! I skipped the double boiler step and followed the instructions of another reviewer and just cooked it after whisking the milk and eggs together. I cooked it for 30 minutes or so. There were no lumps, but it was a little on the soft side, so I would probably cook it for another ten minutes. If that doesn't work, I would probably try adding another egg yolk to see what that does. High class dessert with little work. Love it! :)

Amazing! I let it rise until double then put it in the fridge overnight. The dough was sticky, but the water trick worked to keep your hands free of dough. The hardest part was keeping the oil at the right temperature...the darker ones were nice and crispy though. :)

This was amazing! They had a sort of chewy crispy crust that tasted a little like carmelized sugar and a custard center. Yum! Be sure to grease the pan well. :)

French Baguettes

I just took the bread out of the oven and it smells AMAZING! I am having to hold back from eating it. The dough was easy to work with, (I didn't use a bread machine, just proofed the yeast with sugar and water, then stirred and kneaded the dough), and rose beautifully. I sprinkled some oregano on top of one. I can't wait to have the first slice. Thanks for a great recipe! :)

Quick Yeast Rolls

I didn't have any all-purpose flour, (I know, how can a baker run out of that!), so I used a little over 3/4 cup whole wheat flour and 1 and 1/4 cup = 2 tablespoons cake flour. They turned out light, airy, with a slightly sweet taste and a nice slightly crisp outside. My husband, who doesn't like wheat bread, even liked them! I can't wait to see how they turn out with all-purpose! :)
