Tacos De Matamoros
This is a much better way to prepare tacos! I was taught by a friend how to make it a similar way years ago and haven't gone back to those packaged taco seasonings since. Instead of just water I use canned tomatoes (diced, crushed or whole) with all the liquid. If I have fresh tomatoes then I use a blender to liquefy it before adding it to the meat. I add water as needed to cover the meat if there's not enough liquid from the tomatoes. If I don't have a bell pepper on hand sometimes I use a small can of diced chiles that work just as well.

After reading some reviews and mods, I also added 1Tbs of Worcester sauce to the tomato sauce, and an egg to bind the meatball ingredients better. I found that the water made the meatballs too soft when I was forming them. Next time I will add less than 1/2 c. I also chose to simmer it on the stove rather than bake it and they came out just fine. I basted the meatballs with the sauce every once in awhile to keep them moist and to make sure the rice cooked. The last 15 minutes of simmering I added cabbage (quartered into wedges) to the pot. It's kind of like a lazy version of stuffed cabbage rolls.

Maple Dill Carrots
Easy and tastiest glazed carrots I've ever made. I boiled in water until it was cooked to my liking and drained off the water. I used only a tablespoon of butter so it didn't turn out runny like the result of other reviewers. I added an extra tablespoon brown sugar. Also used dried dill and sprinkled as much as I liked.
