Simple, Classic Chicken Potpie

I just needed the "sauce part" of the recipe as I ran out of canned soup (my usual way of doing it). Am I glad I tried this, it's so worth the extra effort (not so long to make as I thought). It tastes so much better and the white wine give the sauce a little kick. My changes were that I halved the recipe needing only one pie, and I used the whole can of milk plus 2 onces of water and 1 tsp of chicken granules instead of the broth. I thickened it with about 1tbs of corn starch. My new way of making a pot pie from now on. Thanks!

Apple Pie Muffins

Those muffins taste great. I made some changes to make them healthier and they turned up great: flour half whole wheat, half rye, 1/4 tsp salt, 1/2 c apple juice (instead of butter), 3/4 c brown sugar and 3/4 c Splenda (instead of 1 1/2 brown sugar), added 1/2 c cinnamon chips (can't do without any chips!). Topping made only half the recipe with water instead of butter. Made a paste instead of crumbles but makes a sweet muffin top with less crumbs to pick up with kids. A keeper and great to use aging apples.

Caramel Macchiato Ice Cream

Yummy! I used 2% milk, 1tsp coffee extract, 3/4 c sugar and 2c of light cream. Will do again for sure.

Slow Cooker Vegetable Soup

So Good!!! Instead of steak I put 1 cup of split peas, 1/2 tsp of garlic salt instead of salt, added 1 bay leaf, 1/2 tsp parsley. For the potatoes, I put 1 sweet and 1 baking and for the frozen veggies 3/4 cup of corn and 3/4 cup of peas. I just stirred the frozen veggies after 6 hrs and ate the soup right away and it was done. Wil make again for sure.
