Mom's Pineapple-Carrot Cake

it tastes great (apparently; i've never eaten it but have made it for friends), but overflows the bundt pan EVERY TIME. if i didn't get requests, i wouldn't have made it again. for some reason i didn't make a note of the overflow after the first time. i haven't come up with a solution other than to pour some batter into a loaf pan. bottom line: great flavour, but be prepared for the excess.

Peanut Butter Bars I

These taste - and smell! - great. I found the bottom layer to be too mushy. They were fine straight out of the freezer, but that's not a realistic way to serve them if you're bringing them to a party where they're apt to sit on a tray. Maybe I'll try less butter next time...

Bacon and Tomato Cups

i don't eat red meat or dairy - but enjoy cooking for those who do - so i didn't actually try these. however, they were a HUGE hit the first time i made them. i ended up giving away the filling i had left over and wrote down the recipe for six people. they were the first appetizer to disappear at the last party i brought them to and have been raved about every time i've made them.

Real Pecan Pie

I doubled the recipe upon reading the reviews - and ended up having to make two pies. (Not that the recipients minded.) I used nine inch, pre-made, deep dish pies shells and both were filled to capacity. I didn't eat any (no-dairy diet - I just love to bake) but it got a rave review.

Brownie Caramel Cheesecake

i agree with all of the reviewers who suggested preparing the brownie mix according to package directions. i also used president's choice dulce de leche spread instead of caramels and evaporated milk; simple and delicious. i baked the cake for forty five minutes and then left it in the oven for two hours. perfection. and no cracks!
