This is a subtle, spicy, tasty bread, although I can't give it five stars because I didn't follow the recipe exactly. I added an extra teaspoon of cinnamon, about 3 shakes of cayenne, some nutmeg and around 5 counts of orange blossom honey. We also added walnuts and reserved about a can's worth of the pear juice instead of draining all of it so I could make a glaze for the bread.
It was done after about 45 minutes in the oven, and then we glazed it.
To make the glaze:
Melt 2 T butter on the stove. Add 4 T pear juice and a packed 1/4 cup of brown sugar. Let it boil until it coats the back of a spoon. Then poke holes in the bread with a fork and pour the glaze over with a spoon, smoothing it (pastry brushes work well for this) where it pools up.
It has a really subtle flavor, but it's good bread.
