Simple Savory Pork Roast

This had a wonderful flavor. My roast was tall (bone in) and took almost 2 hours to cook, but it was juicy and moist. I cut 2 large potatoes in 1 inch slices and set the roast on them. The roast was crispy all the way around and the potatoes tasted great.

Cinnamon Griddle Cakes

Was the 1 Tablespoon of Cinnamon a misprint? I used 1 teaspoon and it was very cinnamony. Kudos to Sarah Jo for the suggestion of whisking dry and wet ingredients in different bowls and then folding in wet ingredients. Excellent way to not overblend. We are fixing these for the whole family, Christmas morning!

Spaghetti Carbonara II

We just had this for supper. Wonderful recipe! I only changed it to fit what I had in stock. Rice noodles instead of spaghetti, Cilantro instead of Parsley and DiGiorno Three Cheese shredded blend instead of Parmasan. Very good, very different. I can't wait to try the variations suggested here.

Chicken Suiza Cornbread Bake

I wanted to add my own touches, but I was determined that for once I would actually use the recipe. The only thing I changed was to make my own cornbread mix (since my husband can't have glutens) and use real eggs. We really enjoyed this dish; the texture was great. I could not taste the green chiles, so I will either double the amount or omit. I didn't think the canned mushrooms added anything, so I will either saute fresh mushrooms or leave them out. I am going to use this recipe to make an Easy Chicken and Dressing. 2 onions, equal amount of celery, fresh Bay, more spices, no green chiles but lots of fresh mushrooms.

Enchilada Meatballs

Ymmm, I also skipped the tomato sauce and used 2 cans of enchilada sauce. To make my gluten free cornbread, I don't use expensive mixes, I just use 2 cups of cornmeal and leave out the flour. Comes out perfect everytime and it is much cheaper! The taco seasoning is a nice touch in the cornbread; will be great with chili or stew.

Halibut Supreme

This sounded wonderful, but not really on our diet. I don't measure but used about 1/2 the cheese, 1/4 c low fat mayo, 1 c Bulgarian yogurt (left out lemon), GF Flour, 4 diced green onions, cayenne and I seasoned the fish steaks. Great!

I want to try this recipe (I will give it 5 stars since I haven't tried it yet and it requires stars). I use 2 cans of Black-eye peas, 1 pound browned sausage and no cheese. I use celery as well as onion (doesn't affect the taste much, but adds tons of nutrients). Quick and easy supper with plenty of leftovers. I make it several times a months and everytime I have taken it to a "covered dish supper", I have gotten rave reviews and a clean pan.
