Pumpkin Dip

Yummy! I have made this 2 times in the last month for fall parties, and each time I come home with an empty dish (& requests for the recipe)! I doubled the cinnamon and spice, just as I do when making pumpkin bread/pie because that is how my family likes it. I also make it with 1/3 less fat cream cheese. You'd never know it was missing a bit of fat...tastes delicious!

Banana Pancakes I

Delicious! I added 1/2 tsp of vanilla and a few shakes of cinnamon, as other raters before me had suggested. I used frozen (defrosted first) bananas that were super ripe and omitted the vegetable oil (on accident), and these turned out fabulous! I will probably continue to skip the oil since they were so moist and flavorful without it.

Buttermilk Pancakes I

I made these with low-fat buttermilk, added a dash of vanilla and cinnamon, and both my husband and I ate more than our share! These were moist and flavorful and will be made again in our home!

Green Chicken Enchilada

I changed this up quite a bit, based on what I had on hand. I sauteed a small white onion & 4 cloves of garlic. Added ground turkey, cooked & drained. Sprinkled with cayenne pepper, chili powder, and cumin. Put that mixture in 8 medium sized whole wheat tortillas along with spoonful of Las Palmas green enchilada sauce & monterey jack cheese, and chopped, pickled jalapeno peppers for a jolt. Topped with more sauce before baking and finally, the cheese. Served this with refried black beans and roasted corn. Hubby said this must be added to our dinner rotation! I will definitely be making this regularly!

Portobello Pot Pie

This Asian twist on a classic is brilliant! I made this for my husband and his mother. We all LOVED it! I didn't find shiitakes in my store, so I used baby bellas. I used AP flour and used 9 T (thank you other raters/reviewers). We like things a bit spicy, so I added a few squirts of Sirachi to give it a bit of heat. Yummy!

Easy Bake Fish

I made this tonight, and it was delish! I didn't have time to deal with preheating the oven, so I just pan-seared it on the stove. Hubby loved it too, so I'll be making this again!
