Cranberry-Pumpkin Cookies

These are very tastey and moist cookies. They capture the flavors of the holidays in a bite. I did not alter the recipe except to add just a hint of ginger. Next time I make them I may try adding a hint of cloves instead. Delish!

Zucchini Nut Cookies

These are simply fabulous. I made no changes and they were perfect. Light and cake-like. Spice is just right. I may try making them with butter instead of shortening next tiem for a bit of a buttery taste.

Stuffed Hot Peppers

Grew Hungarian peppers in the garden for the first time this year and this recipe is a great way to use them. I made it lighter with turkey Italian sausage and light cream cheese. Delish. The filling needs a bit more of something spice wise but have not been able to figure it out. We are going to make these up (lots of peppers) cook them half way, vacuum pack then freeze so we can enjoy them over the winter.

Colleen's Slow Cooker Jambalaya

We truely liked this recipe except next time I will decrease the cajun spice. It was too hot for our taste. My son-in-law grew up with jambalaya and even he wanted the spice decreased some.

Vegetable Quiche Cups to Go

This is a good and quick breakfast. Can reheat in the micorwave in less that 2 minutes. I find that I like this better made with chopped broccoli. The spinach tastes a little bitter, even using name brand spinach instead of store brand. Adding a few drops of red pepper sauce also improves the flavor.

Chili I

This chili fast became a favorite in our house. I agree that this is best after sitting overnight so I usually make it the day before I want to serve it. No matter how big a batch I make so there are leftovers for the week they are gone in a couple days. I often substitue a can of green chilis for dicing up hot peppers myself and it works fine. I don't like beer but you can't taste it in theis chili and it is not as good without it. DO NOT try in slow cooker if you don't like beer taste as it had strong beer flavor when I tired it.
