About this Cook
I'm a premature dreamer, tragic Romantic, and failed writer with a pen permanently graphed to my hand. I seem to live the poor man's life working non-profits, but I also play a part in a Mustang restoration business. Currently, I have 2 1967 Fastback Mustangs being in the process of restoration. One classic, and the other a Shelby Clone/Resto-mod.
My favorite things to cook
My goal is to feed my once starving artist, so if he gets an inclination for a dish, I like to search it out. Overall, however, slow-cooker recipes work best for my school/internship/Mustang schedule, but Korean food tastes the best. So probably a combination of all... Oh, and I love to bake.
My favorite family cooking traditions
Thanksgiving will always be a family thing. My dad fought the military, an abusive ex-wife, and poverty to give my sister and myself a good life, and my favourite memories are cooking Thanksgiving dinner. I've seen him work 3 jobs at one time, but he never missed a school field trip. Even when things got rough, the 3 Musketeers stuck together, and now that it's me and him after all the difficulties, Thanksgiving is the time to truly appreciate what family means. He is my Hero.
My cooking triumphs
I've been really surprised and thankful for this site. It has some amazing recipes that have made it possible to pass me off as cooking savvy when I still have so much more to learn.
My cooking tragedies
I've made spare ribs once, but they were HORRIBLE! Now, the only barbeque I make is raspberry chipotle pulled pork through the slow-cooker.

Cajun Style Meatloaf
I didn't have andouille sausage so I used hot Italian sausage and left out the green bell peppers (not a fan) and have cooked it both in the slow cooker and oven. Both times are a SMASH! Not mushy or greasy at all. Now it's a usual staple at the house and a constant request among friends.

Chicken Soup II
Amazingly hearty and filling! Definetly use low-sodium chicken broth and don't bother waiting for a chilly day. This was a big hit! Thanks for sharing!

Fire-Roasted Tomato and Spinach Pasta
I didn't make it as is so I know my rating may be a bit off. As is, it lacked flavouring so I added a lot of Italian spice mix and some onions (I just like onions). It tasted amazing! Love it for its versatility and will probably throw in some zucchini and squash for a more veggie nutritious meal. Thanks so much!
