Mashed Cauliflower

Delicious. Followed the directions almost exactly: used 1.5 tablespoons of freshly minced yellow onion and panko flakes instead of dried onion and breadcrumbs. Must purée, masher won't work as it leaves it granular and inconsistent. Can def jazz it up with herbs and spices if you want to.

World's Best Lasagna

Easy to make and adding veggies (or substituting lasagna for zucchini slices) adds some "healthiness" to it. The sauce gets tastier the longer you're able to leave it simmering, of course. Store extra sauce in the freezer and use it over other pasta!

Baked Salmon Fillets Dijon

Excellent!! Salt n peppered the salmon first, added layer of Trader Joe's whole grain Dijon mustard, then topped with panko flakes tossed in melted butter. Baked at 400. So easy. So delicious.

Amazing Slow Cooker Chocolate Cake

wow! It was prepared as written (using whole wheat flour). And except for a couple of small, somewhat firm spots on the outside of the cake likely due to uneven heating, this cake came out surprisingly delicious. It tasted even better the next few days. Definitely a keeper for its simplicity and taste. TY to original poster.

Basic Crepes

Perfectly thin consistency for crepes. I used whole wheat flour, and sifted dry ingredients into wet ones, then added melted butter. It yielded seven, 8-inch crepes.

Brussels Sprouts Salad

Easy prep with common items in the kitchen. To add a little zing to the dressing, I added lemon zest to taste. I did roast the sprouts as another reviewer did, with evoo, salt, and pepper; Then, let cool down before adding dressing. Also, did not have lettuce nor almonds or any other nuts on hand, but didn't need it. Thanks for the recipe!

Slow Cooker Chicken and Dumplings

Delicious! As per other reviewers, I added 14 oz low salt chicken broth, seasoned chicken (boneless, skinless chicken thighs, in my case...love dark meat!), and used only 1 can of biscuit dough with each biscuit cut up into quarters. The total cook time was 4 hrs on high with the biscuits dunked in after 3 hours. To add some healthiness to it, I microwaved frozen organic mixed veggies and added those to the serving bowls. This was easy to prepare, and we enjoyed this dish very much.

Glazed Tofu Meatloaf

So delicious! The sauce really is key as all others have said (even though I used coarse dijon b/c I didn't have yellow)...Doesn't matter what protein you bake. I used ground bison and seasoned it without adding the onion soup mix. Also used panko flakes and forgot to mash the small cubes of leftover tofu, but no matter, it still came out looking good and yummy! For half the # of servings, it took about 45 minutes.
