Carrot Recipe

Reviewed: Nov. 11, 2012
Delicious the way I made it using this as a general idea: I grated four cups of carrots, and in a frying pan (not a saucepan - wanted to keep the boil time low) added the carrots and a can of sweetened condensed milk and on high boiled for about 10 minutes constantly stirring. I did add a little bit of milk near the end because I wanted the carrots to be soft. After all that had boiled out (for the most part) I added about 1/2 cup of brown sugar. In a seperate pan I melted some butter and added slivered almonds (waht I had on hand) and raisins. I even added some dates I had....after sauteing them for a few minutes I sprinkled some cloves and cinnamon on top of the carrots and put the nut raisin mixture on top and served. All of my very picky children enjoyed this "Indian dessert" and said it tasted like pumpkin pie. Really nice change of pace. Thanks for sharing the recipe.

Corn Tortilla Chips

Reviewed: Sep. 3, 2012
I know another reviewer said this was just common sense but honestly, I never thought of using corn tortillas for this purpose. Last month I was at a friends house and they made tacos by frying corn tortillas in half. It was so delicious (and so different, I always make my tacos with flour tortillas - technically a burrito I guess)..Fast forward to tonight kids and I were wanting nachos but I did not want to load 4 kids up just to go get some tortilla chips...then I thought "hmm..." and googled to make sure there was no fancy trick required for tortilla chips. There isn't and so I made these and they were delicious and really makes nachos even cheaper to make. I used older corn tortillas also.

J.P.'s Big Daddy Biscuits

Reviewed: Sep. 2, 2012
Simple recipe with tasty results. I do believe these were the best (and easiest) biscuits I have ever made. Lots of options with these. Tomorrow night I am flavoring the shortening with garlic powder and adding shredded cheese. This is my 'go to' biscuit recipe from now on!

Pizza Dough I

Reviewed: Jun. 18, 2012
For a quick and easy dough this recipe really impresses! I did add a tablespoon of honey, basil flakes and garlic powder (about a tblsp each, but I looove garlic and basil)...I also let it 'rise' for 15 minutes while I whipped up some brownie batter (from a box but who cares?) ...put my toppings on and baked it for 15-20 minutes @ 425 (personal preference for my oven) ---- this pizza crust came out FAR better than any of the drive thru or chain pizzas. Delicious, fast and easy - it made pizza making EASY.

Fast and Easy Tofu Lo-Mein

Reviewed: Dec. 5, 2011
Oh my goodness - THANK YOU! I don't even like ramen noodle soup and am asian food cooking impaired and this came out great! I had to use what was on hand, so I am going to share what I did: First I poured teriyaki type sauce on the cubed tofu and baked it for 15 minutes in the oven Next, I had leftover cucumbers, tomatoes and cabbage with cilantro that had been soaking for two days in a balsamic vinegar and sugar mixture. It was a cucumber tomato salad recipe gone wrong. I drained the balsamic off...Found a handful of matchbox sliced carrots, and some frozen corn and started sauteeing in some sesame oil. I food processed a whole onion and clove of garlic and added that in. I started the noodles as suggested in the recipe. I then took the tofu out of the oven, added that in with the vegetables and used the seasoning packets. I added the drained noodles and YUM! My kids love it, I love it and we are all going to make this a go to regular meal when the mood strikes for some asian inspired grub. Thank you so much for posting this!

Oxtails with Gravy

Reviewed: Nov. 6, 2011
First time making oxtails and this recipe was really great, good flavor, and lovely gravy. But, we think in the future we will buy oxtails and use them more like you would a hamhock in beans and soups etc. Not a lot of meat on oxtails to justify the price, or cooking time for this recipe IMO If you love oxtails already, try this recipe.

Lamb Chops with Balsamic Reduction

Reviewed: Oct. 22, 2011
I had a leg of lamb and this marinade sounded good as I was cooking for a crowd and had never cooked a leg of lamb before. Did this marinade (subbing lemon juice for zest, adding a stick of butter, and some organic lamb medley herbs I purchased at the groc. store) and let it sit for 15-20 hours with the lamb that had garlic in its skin - and then I cooked it in a roaster oven. Oh my golly gee goodness. I was complimented up one side and down the other by the crowd. I have to admit it was the best lamb I ever had also!! This marinade is the go to marinade for lamb in my house from now on. Thanks so much for sharing!

Bread Pudding

Reviewed: Oct. 22, 2011
Swallow your tongue good even for those of us who don't like bread pudding! I must admit I made a couple minor changes, but no way are they what made this pudding delicious! Thank you so much for sharing! For any one interested in what changes I made, I added more spices (nutmeg, cloves, cinnamon) and baked in the oven for 325 for 40 minutes instead of the water method. I also only had half and half instead of cream and used maple extract instead of vanilla extract, as I had no vanilla on hand.

Clone of a Cinnabon

Reviewed: Aug. 23, 2011
I made this without a bread machine, and it turned out a little denser than I would have liked, to be honest. Not sure if I needed to knead it longer or if my yeast may be a bit on the older side. Results were good enough to give a five star and attempt again. Great frosting --- I did add a pinch of pumpkin pie spice to the frosting and the spices kicked it up a notch of yum. :) Thanks for sharing.
