Slow Cooker Buffalo Chicken Sandwiches

This recipe was really easy and great for potlucks. I will be sure and use unsalted butter the next time as the saltiness was overwhelming in the leftovers.

Chicken with Chipotle

This recipes was delicious even when you sub low fat for full fat ingredients. We also grilled the chicken quarters and added to sauce at last minute. Wish we hadn't skipped the rice. It was needed to soak up the creamy spicy sauce.

World's Best Potato Salad

I made a humongous bucket of this potato salad for a barbeque this weekend and it was almost entirely gone by the evening. Monochromatic food scares me so I varied the potatoes and used 1 bag small red, 1 bag purple and one bag multicolor fingerling (about 5 lbs total). I also used more mustard, added paprika and topped the salad with celery seed, paprika, and green onions. Next time I will decrease the sugar, and increase the salt. Definitely a keeper!

Patti's Mussels a la Mariniere

I think my dissatisfaction with tis recipe could be chalked up to user error. The mussels were perfectly cooked but the broth was too "sharp". I used a pinot grigio as that was what we had on hand and the flavor never mellowed out. Maybe I needed to cook longer or use a Chardonnay?

Shrimp and Okra Gumbo

We really liked this one. I did substitute one pound of shrimp for one poucnd chicken andouille because it was what we had on hand. I also used 7 cups water and added oregano,parlsey, Cajun seasoning, and salt to taste. Also it had more flavor the second day!

Slow Cook Thai Chicken

I wasnt too crazy about thsi recipe but my boyfriend liked it. I halved teh peanut butter and it still tased like peanut butter soup with chicken. Maybe if there was coconut milk in it it would taste more "thai"?

This was delicious! I used more feta and ended up using alot more oil. Next time I will try grilling the vegetables but dish was fabulous!
