My Favorite Sloppy Joes

Reviewed: Apr. 18, 2013
Made this minus the sugar and beef broth (used ground turkey and water). Made a very tasty "grown up" sloppy joe.

Doubled the recipe and got four meal sized servings.

Spaghetti Squash I

Reviewed: Jan. 7, 2012
Only thing I did differently was add a can of drained diced tomatoes with chile instead of the fresh (I was out...). Very tasty!

Breadsticks with Parmesan Butter

Reviewed: Oct. 28, 2011
I meant to make only half of this recipe because I was down to my last bit of yeast....I messed up added two cups of water so just went for the whole things. They still came out very nicely (just a bit more rising time). I would suggest adding garlic and italian seasoning to the dough itself and on top as they weren't quite flavorful enough for me.

Acorn Squash with Apple

Very good. Only needed to be microwaved half as long as stated though.

Banana Oatmeal Cookies II

Reviewed: Mar. 18, 2011
Very tasty. I modified it a bit to siut my needs, by adding only 1/4 cup unsalted butter and 1/2 cup unsweetened applesausce in place of the shortening. I reduced the sugar to 3/4 of a cup (we don't like super sweet cookies). I didn't have cloves so I left those out and added 1/2 baking powder as suggested by another reviewer. They taste just like the banana nut bread! Mine did not spread (probably due to the modifications I made with the shortening). But as long as you flatten them out a bit before or after you stick them in the oven they are fine and to me it's worth the calories saved. Thanks for sharing this recipe!!

Caramel Frosting V

Reviewed: Feb. 17, 2011
Tasted great. However after 30 minutes of beating with a stand mixer I still did not get frosting with a fluffy texture. I followed all the tips from reviewers including adding a bit more heavy cream as I whipped (a must or else it would have just been a glaze, not a frosting). I may use this recipe again, but the texture is notthing like stated and there is a lot of instructions missing.

Basic Truffles

Turned out wonderfully. Make sure you don't leave them in the fridge too long before making them into balls or else it is too stiff to work with.

Zucchini Risotto

Reviewed: Feb. 14, 2011
Flavor was wonderful, though I never got the creamy texture I was expecting even after playing around with the liquid. Perhaps I just need a little risotto making practice which is okay because I will definitely make this again.

Stuffed Chicken Valentino

Reviewed: Feb. 14, 2011
Good recipe. I like many others added additional seasoning to suit our taste (garlic powder, onion powder and extra italian seasoning). The cheese melted right out of the chicken which was disappointing, but the crisp outside from the quick broil was nice.

Belle's Hamburger Buns

Reviewed: Jan. 31, 2011
I've made this a few times now and it turns out nicely each time. I no longer buy buns from the store. I just make a batch of these and freeze the extras until they are needed. The only changes that I made were cutting the salt back a bit (to 1 tsp) and making it with 1/2 whole wheat flour and half all-purpose. I leave out the last cup of flour and add it in slowly if needed. Some times I don't need all 5 1/2 cups to get the dough to come together.

Gingerbread Men

Reviewed: Dec. 6, 2010
Great recipe! I had no problems getting the dough to come together as some mentioned. Followed the recipe exactly and they turned out great. Only problem is it makes nowhere near 30 cookies. I only got 15 using a standard gingerbread man shaped cutter.

Boiled Bagels

Reviewed: Nov. 18, 2010
This was my first time making bagels. This recipe was easy to follow and they turned out well. I did broil them before I boiled as suggested. I only made a half batch of plain bagels and served them with apple butter. I'm looking forward to making these again soon and playing with the flavor. Thanks for the recipe!

No Sugar Apple Pie

Reviewed: Oct. 10, 2010
Nice recipe. Very easy to make and it turned out nicely. I couldn't find unsweetened apple juice concentrate so just used the regular. I mixed granny smiths with red delicious. I thought it was a nice mix of sweet and tart, but as per the hubby's request will use a combination of sweeter apple next time.

Donut Muffins

Reviewed: Oct. 10, 2010
Made these this morning and they were great! It made 24 mini muffins with a tiny bit left over. The only thing that I did differently was use only a heaping 1/4 teaspoon of nutmeg (they still had a very nice nutmeg flavor) and used light spreadable butter. I will definitely use this recipe again. Thanks!

Orange Chiffon Cake

Reviewed: Sep. 18, 2010
Makes a very good, fluffy cake. I added orange extract instead of vanilla and it had a nice light orange flavor not too over powering. I will use all orange juice and omit the water next time as some others suggested for an extra punch of flavor. The cake is huge so I froze over half of it (just me and the hubby) this would make a great bake sale or party cake. I topped it with vanilla mousse, but it would have been great on its own.

Made a ton of wings and drum sticks for a BBQ party. I didn't baste with the honey afraid that they would burn on the grill. I had serveral people ask what was one them. They were a hit. Will make again basting with the honey.

Stuffed Acorn Squash Supreme

Reviewed: Sep. 13, 2010
Good, but I changed a few things as others mentioned: baked 2 squash each halved for about an hour then filled with one cup of brown rice, 2 italian sausage links removed from the casing and the rest of the ingredients minus the cheese. Husband loved it, but I thought it was missing a little something. Not sure what though. Will make again.
