Surimi, Spinach, and Roasted Red Pepper Quiche
This was easy and fantastic! I used 4 green onions (7 seemed like a lot), a pouch of real crab meat, and whole milk instead of heavy cream. It was a little runny/needed to cook longer, (probably because of substituting milk for cream). But it still turned out delicious... a definite for company and holidays! Thank you!

Garlic and Tomato Tilapia
WE REALLY LIKE THIS. I increased recipe to 6 frozen tilapia filets (thawed). I used one can italian seasoned diced tomatoes with less salt and one can mild rotel - both undrained. Seasoned the fish with a little olive oil, sea salt and pepper during the first 10 minutes of cooking. Then cooked for 20 with the tomato/garlic/sourcream mixture. Served over whole wheat rotini with green beans and bread sticks. SO good!

Fried Corn with Smoked Sausage
Very good for being so easy. I use red and orange pepper (instead of green) and added a splash of worchestershire instead of msg. Had a good flavor and even the kids ate it up.
