Great low fat, low sugar muffin recipe. The finished product may not be the most aesthetically appealing but they certainly are delicious-and much healthier than traditional muffins!
A few alterations I made...
I used 1/2c of all purpose flour and substituted 1/2c. of sugar with stevia. I also used brommel and brown buttery spread instead of butter and blueberries from the freezer (i purchased them fresh and froze them for convenience/increased shelf life). I baked them for 25 minutes in a large muffin tin. Made 7 large muffins. Will make these again!
